Pandemic Purchases

While people have been going crazy for toilet paper, paper towels, and sanitizer, our family has been constantly buying... cereal!

Typically, we just have Cheerios in the house. So whenever we used to go to breakfast buffets, my kids would go straight to the cereal station to eat colorful, sugary cereals to their hearts' content.

Such a simple thing brought them so much excitement.

Once shelter-in-place started, we started buying all sorts of new and different cereals, and the kids have been loving it (I've found myself having a bowl for dinner at times too!).

Navigating the New World

Dine-in has started, businesses have re-opened, and travel restrictions will soon be lessened even more. We are still far from “normal,” and it is not time to become complacent.  As much as I want to see my friends and other family members, we are still playing it safe - for the most part.

I still haven’t gone to the grocery store, but I have traveled inter-island for work.  We still haven’t visited grandparents or great grandparents, but I have dined-in for a media event.

I find it still very hard to navigate the new world.  I wish I could dine out more and travel more.  But I know I should still be very cautious.  I was always one to practice JOMO, but I find myself sometimes having FOMO these days, as I see friends out and about.

We all can only do what we feel is right.  Every action comes with some amount of risk.

Flyin' Ahi Food Truck



If you live or work in the Mililani area, you probably know that there are a cluster of food trucks that sell some of the best local grinds in Mililani Tech Park fronting Spectrum, five days a week.

I finally got the chance to check out the scene, and after finding parking on the next block from the food trucks, I made a bee-line for FLYIN' AHI.



There was one menu item that  I  had my heart set on, and  I was so happy to see it on the menu: KALBI FRIES.


Wait, the food truck is called Flyin' Ahi, and you ordered kalbi fries? You got that right!

Imagine a generous portion of crinkle cut fries, drizzled with a mayo-based sauce and furikaki, topped with tender, juicy bite-size strips of  kal bi.  



I knew it was going to be good, but not this good.  I sat in my truck and devoured a majority of it on the spot, because I knew the fries would get soggy by the time I got home.  



Maybe next time I will actually order one of their ahi plates, but it will be in addition to the kalbi fries!

Tuna and Eggs

Two simple ingredients - a can of tuna and some eggs.  Mixed together and fried, and they immediately bring me back to my childhood, as I remember my grandparents making this for me all the time. 

Simply take a can of tuna, 3 eggs, mix together, and fry as patties. 

Sometimes my grandparents would mix in white or green onions.

I would eat them for dinner, with rice and shoyu, or even on its own as a snack at the park.

Such a simple dish, but it brings back great memories.

Another delicious 2 for $20 Meal Set from M by Chef Mavro

I was invited to sample another 2 for $20 Meal Set from M by Chef Mavro. This time around, the entree was M BEEF STROGANOFF



Honest, at first glance I wasn't so sure I would enjoy this one as much as the M SHEPHERD'S PIE. The white mixture on the top looked too rich and creamy for my taste. 



But after four minutes in the microwave, it turned into this beautiful bowl of gourmet pasta for two.  


The second  part  of  this set was M BREAD PUDDING with White Chocolate Banana  Cremeux and Lilikoi Mango Sauce. Another perfect ending to a perfect meal set from M by Mavro!

Raising Cane's Chicken Fingers - Mililani

Raising Cane's Chicken Fingers opened up in Mililani recently, and I decided to give it a try.

On the menu is - you guessed it - chicken fingers, either with fries, or fries and coleslaw, or in a sandwich.

The kids got kids meals, which included 2 chicken fingers, fries, a drink, and a toy.


My husband and I got the 4-piece combo - chicken fingers, fries, coleslaw, and Texas toast, and Cane Sauce.

I thought the toast was the best part of the combo.  The chicken fingers were good, but I have had better elsewhere.  They tasted underseasoned, even with the sauce.

It's worth a try for yourself just to see how it compares with other places that serve chicken fingers.

Peanut Butter-Stuffed Chocolate Cookies

I was craving peanut butter and chocolate, so I decided to make Peanut Butter-Stuffed Chocolate Cookies!

They are rich and decadent, and perfect for anyone who loves the PB + Chocolate combo!

Peanut Butter-Stuffed Chocolate Cookies

Ingredients:

PB filling:
  • 1 c creamy peanut butter
  • ½ c powdered sugar 
  • 1 t vanilla

Cookies:
  • 1 c butter, softened
  • 1 1/4 c brown sugar
  • 1/2 c sugar 
  • 2 large eggs
  • 1 1/2 t vanilla extract
  • 2 1/3 c flour 
  • 1/2 cocoa powder 
  • 1 T cornstarch
  • 1 t baking powder
  • ¾ t salt
  • 1/2 t baking soda
  • 1 cup chocolate chips
Directions:
  • Combine all peanut butter filling ingredients, and drop by 2-teaspoonfuls onto parchment-lined cookie sheet.  Place in freezer. 
  • Mix butter and sugars in large bowl until combined.
  • Add in eggs and vanilla.  
  • In a separate bowl, mix together the flour, cocoa powder, cornstarch, baking powder, salt, and baking soda. 
  • Gradually add dry ingredients to wet, and mix well.  
  • Stir in chocolate chips.
  • Chill in refrigerator for at least 30 minutes.
  • Preheat oven to 375 degrees Fahrenheit.
  • Roll dough into balls (about 2 teasponfuls)
  • Sandwich the peanut butter filling between two balls of dough, and wrap dough around filling to form one giant cookie dough ball.
  • Place balls onto parchment-lined cookie sheet and bake for 13 minutes.

Comfort Food Combos

A friend of mine recently made some beef stew for dinner, and he asked me if I ever ate it with King's Hawaiian Sweet Rolls + butter.  I never had beef stew with bread and butter, so he said I had to try, and it turned out to be quite a tasty combo.  

Turns out, other people have had this combo before too.

Which reminded me of how people said they eat mayo on their chili - a combo I have never tried either.

Traveling Inter-Island After the Lifting of the Quarantine Requirement

Over the weekend I traveled to Hilo for work.  For those wondering what the experience is like now that the inter-island quarantine has been lifted, this is what my experience was like...  I checked in for my flight 24 hours ahead of time, completed the mandatory travel form, and on the day of departure, I arrived to the airport 2.5 hours ahead of departure time, since I anticipated delays.

Depending on how you get to the check-in lobby at HNL, it can be quite confusing as to where to go, but all I knew was that you would have to get your temperature screened, so I looked for the screeners and made sure I was on the right path (I had no luggage to check).

I got my temperature checked, and went to a table to turn in my travel form.  I showed my ID, and the employee called the cell # listed on the form to make sure I was reachable for any reason.

I then went on my way to security, where I was required to take off or pull down my mask as the screener verified my ID.

There was no separate TSA precheck line - everyone was funneled into a single line, however, if you have TSA precheck, you simply show your boarding pass to the security screener and you will go through normal precheck procedures.

The entire process from arrival at the airport through security was less than 5 minutes.

The gates were quite filled (not much social distancing), so I decided to find a spot away from my gate, where not too many people were congregating.

I flew on Hawaiian Airlines, and during the boarding process, I was the first one on the plane.  Priority and First Class boarding still exists, but passengers are no longer boarded by zones, and instead by row numbers (back of plane gets filled first).

Upon boarding, passengers were given sanitizing wipes. Be sure to not put it (or anything at all) in the pocket in the seat in front of you (prior to takeoff the flight attendant will collect trash).

I did have someone sit next to me in First Class, and the same thing happened on the way back, as standbys were cleared.

In reality, social distancing is impossible on a plane, unless it's half empty, because no matter where you sit - even if the seat next to you is empty, there will still be someone in back, in front, across, or diagonally from you.

Masks are required onboard, and you are prohibited from changing seats (moving to an empty seat0 due to the pandemic.

In ITO, the process was nearly identical, except forms were turned in first, and then temperature taken.  Also, the TSA precheck line at ITO still exists, so from the time I got to the airport and through security, it was less than 5 minutes (which is actually like a typical, pre-pandemic timeframe).

There were plenty of open seats in the lobby and very few people, compared to HNL. 

Once again I was the first one on the plane, and on this trip, the flight attendants were handing out juice and water as customers boarded, versus passing them out during the flight. 

I can't deny that I did still feel somewhat nervous during the whole process - this pandemic is nothing to take lightly, but the temperature screenings, numerous hand sanitizing stations all throughout the airport, and the mask requirements did help to put me at ease a little. 

Everyone was gracious - the airport staff, National Guard, TSA, Hawaiian Airlines employees.  They have to encounter hundreds of people a day, and I thank them for their professionalism and their efforts in keeping the public safe.

HoMA to Reopen July 16: New Evening Hours, Safety Guidelines, and Kamaʻāina Fridays!

The Honolulu Museum of Art (HoMA) is thrilled to announce it will reopen to the public on Thursday, July 16 with new hours geared toward Hawai‘i residents and several new safety protocols in place, after a nearly four-month closure due to the government’s statewide “shelter-in-place” order in late March.
“Utilizing social media and digital outreach, our focus throughout the COVID-19 pandemic has been to act as an oasis of art, culture and conversations for our audiences here and throughout the country during a very difficult time,” said Director Halona Norton-Westbrook. “As the community embarks down a path to recovery and new norms, we are truly excited to welcome everyone back to reconnect with the art that we’ve all missed, and surround ourselves in the uplifting and healing environment that our museum represents.” 
Upon reopening, the museum will adjust its days of operation to Thursdays through Sundays and introduce new evening hours. This new schedule will allow the museum to ease back into full operations and allow for maximum accessibility for the community. HoMA will have evening hours on the weekends for the first time since 1972, when it became the first museum in Hawai‘i to do so. 
The museum’s new hours are:
  • Thursdays – 10am to 6pm (extended two hours)
  • Fridays and Saturdays – 10am to 9pm (new evening hours, extended five hours)
  • Sundays – 10am to 6pm (extended two hours)
“HoMA has always been a gathering place for the local community and we’re adjusting our hours to reflect that commitment,” said Deputy Director Allison Wong. “Being open in the evenings will allow local residents who work during the week to relax, unwind and get away from it all in our art galleries and courtyards, much like you might take in a movie or go to a restaurant for an evening out on the weekend.” 
The HoMA Café will be open and observing safe social distancing with grab-and-go menu items, as well as drinks and refreshments. “The idea is that you can gather safely and enjoy an evening beverage under the stars in our courtyards,” said Food and Beverage Director Josh Hancock. “We’ll have options for keiki and adults, so that the whole family can enjoy the unique experience of being in the art museum at night.”
Pau Hana Fridays for kamaʻāina
As a part of HoMA’s ongoing commitment to being accessible and welcoming to the local community, the museum is excited to partner with Hawaiian Airlines® Bank of Hawaii World Elite Mastercard® to extend free admission to all Hawai‘i residents every Friday from 4-9pm through September 11. “We remain committed to elevating the art experience through our longtime partnership with the museum and believe this rare evening setting is a great opportunity for residents from across the islands to reconnect with family and friends in a fun and enriching atmosphere," said Avi Mannis, Senior Vice President of Marketing at Hawaiian Airlines. 
Exhibitions
One of the most exciting aspects of HoMA’s reopening is the extension of 30 Americans, which will remain on view through September 6. The highly acclaimed national traveling exhibition features works by 30 contemporary artists connected through their African American cultural history, and was well-received prior to the museum’s abrupt closure in March.  
Presence features abstract and figurative paintings, sculpture, and works on paper by eleven modern and contemporary African American artists. Works in this exhibition are from the museum’s permanent collection.
The ongoing Hokusai’s Mt. Fuji is an in-depth exploration of Thirty-Six Views of Mount Fuji, one of the most famous ukiyo-e series in HoMA’s collection.
New health and safety measures
Like all other public venues here and around the world that are prioritizing the health and safety of their crowds and audiences, HoMA is adhering to local, state and federal guidance limiting group gatherings and social distancing. The museum will also introduce timed-entrance, contactless payment options, one-way gallery paths to regulate flow of visitors, and the requirement that masks be worn at all times. Enhanced daily cleaning of high traffic areas will be implemented with an emphasis on counter tops, doors, elevator buttons and other frequently touched areas.

Ogo Ono-Loa Hawaii




I normally don't order food delivery, but since Ryoji Soranaka's operation is delivery-only, I made exception because I really wanted to try his plate lunches.  I first learned about him from a friend who posted his plate lunches on social media.  My friend told me the chef operates a restaurant in Japan but that he's here now, selling plates through Facebook for delivery only.  I joined his private Facebook page (Ogo's Alumni) and discovered that he posts his menu and delivery route daily.  Unfortunately, my area was not on his normal delivery routes.   A few weeks passed until the stars had aligned and I was able to place an order for a couple of plates.  I texted my order, received my confirmation, and it was delivered a few minutes before the promised window of time.

My family and I enjoyed both plates. The crowded favorite was definitely the cold ginger chicken - the sauce is what makes any cold ginger chicken dish stand out from the rest, and Ryoji really knows how to make a mean ginger sauce for this dish!

Unicorn Cookie Bars

Prior to the stay-at-home order, I picked up a bag of Unicorn Chips from the grocery store because I thought they'd be something fun to bake with.  I finally used them to make Unicorn Cookie Bars.

The chips were a little too sweet for my taste (vanilla-flavored), but the kids loved them, and I sure enjoyed the colors!

Unicorn Cookie Bars

Ingredients:
  • 1 1/2 c flour
  • 1/2 t baking soda
  • 1/8 t salt
  • 1 c butter, softened
  • 1/2 c granulated sugar
  • 1/2 c firmly packed light brown sugar
  • 1 large egg
  • 1 t vanilla extract
  • 2 cups unicorn chips, divided
  • 2 T sprinkles
Directions:
  • Preheat oven to 350°F. 
  • In a medium bowl combine flour, baking soda and salt.
  • In a separate large bowl, cream butter and sugars until light and fluffy.
  • Mix in egg and vanilla. 
  • Pour in flour mixture and combine well.
  • Mix in 1 c unicorn chips and the sprinkles.
  • Pour batter in prepared 9x13 pan and top with remaining unicorn chips, and bake for 20-25 minutes.

Brioche French Toast

I made yet another easy meal with ingredients from the M by Chef Mavro CSA Box - Brioche French Toast!

I simply sliced up the Brioche with Black Sesame and Cacao Nibs, and dipped each slice into a mixture of 3 eggs, 1/4 c coconut milk, 2 t vanilla, 2 T sugar, and 1 t cinnamon.  I melted 2 T of butter into a pan, and cooked each slice of brioche a few minutes until golden brown.

I served the French toast with M Roasted Maui Pineapple with Mango and Sherry Sauce and some chopped walnuts.

What a quick and yummy breakfast!

Kids love to move! Yoga can be a fun way for children to learn a new way to move their bodies, while also learning how to be still and improving coordination. At this month’s virtual Town Center of Mililani Keiki Club, instructor Paula Celzo of Still & Moving Center will lead a free yoga class, especially for kids. Get ready for a fun, calming time, with this Keiki Club Watch Party on Facebook @TownCtrMililani and IGTV on Instagram @TownCenterofMililani.

Still & Moving Center, located in Honolulu, is a comprehensive body, mind and spirit movement center that features classes in Nia, aerial, yoga, qigong, hula, tai chi, kids classes, Pilates and other bodywork. Paula Celzo has led Kids Yoga & Art for the Still & Moving Center.

Cut out handprints can be dropped off at the center’s Management Office (weekdays, from 8 a.m. to 5 p.m.) or emailed to info@towncenterofmililani.com. These tracings will build the words “We Are Mililani” on a large window display at the center. It’s a great family activity that reinforces Mililani’s strong community pride. All are encouraged to join in.

Keiki can also enjoy a free “Starstruck Activity Book” downloadable from the center website. It includes coloring, counting, Mililani trivia, word scramble, word search and lots of fun activities for the kids. Completed activity books can also be dropped off at the center’s Management Office for a really cool prize (weekdays, from 8 a.m. to 5 p.m.) Town Center of Mililani is proud to offer activities that are fun for keiki and their families.

Please remember that face masks are required when shopping at Town Center of Mililani. While at the center, guests must also avoid large groups and practice social distancing. Those who are at higher risk for illness, such as the elderly, those ill, recently ill or who have been around sick people should stay home, as needed, to help keep everyone on Oahu safe. The center follows federal and local health guidelines. The safety of its guests and the Mililani community is the center’s top goal, with increased sanitation methods and cleaning protocols using CDC approved cleaning agents.

Virtual PE

Long before the pandemic struck, I signed up my oldest son for summer school PE.

Well, because of the pandemic, all summer school classes turned virtual, including PE.
I give a lot of credit to all the teachers for adapting to the new normal for school, but for PE especially, I can tell how challenging it has been for my son's teacher.  She does live workouts and has to monitor and watch all the kids for progress; the kids do runs on their own and she has to trust that the documentation they send in is honest; she has had to be flexible in finding new ways to teach and engage students, when PE is supposed to be an interactive / active class.

I appreciate the teacher so much for all she has been doing for the kids so far, and she has had so much patience.  This isn't easy for the kids, the parents, or the teachers, but everyone is trying their best to make it work.

My son has been enjoying the class, and sometimes we tag along on the runs.  

I'm interested to see how he progresses as the summer school session goes on.

Summer Pasta with M by Chef Mavro CSA Box Ingredients

Another extremely easy dinner was made thanks to ingredients I received in the M by Chef Mavro CSA Box.

I used the pasta, Ho Farms tomatoes, De La Mesa Farms pea shoots, and Chef Jeremy Shigekane's Yuzu Brown Butter Sauce to make a delightful, summery pasta!


I simply boiled the pasta according to package directions, and tossed in the tomatoes and pea shoots after cleaning them, along with the yuzu brown butter sauce.  I heated everything up in a saucepan for a few minutes, and dinner was done!

So easy, and so delish!

I really love how the CSA Box makes dinner time a cinch!

Rainbow Drive In - Ewa Beach

I was craving tater tots, and something with gravy, and also a slush float, so the one place that came to mind was Rainbow Drive In

We went to the new location in Ewa, where our order was ready and waiting for us after we called it in.

We ordered the staples - gravy fries, chili tots, chili, loco moco, boneless chicken with gravy all over, mixed plate, plain tots, and slush floats.

Everything was good - and of course the tots would've been better eaten immediately, but all of those comfort foods totally hit the spot.

I'm glad there are more Rainbow Drive In spots around the island!

Planting Fail

I feel like every year I try to grow something - herbs or veggies, and I always fail.  Usually it's because we end up going on trips and I forget about the plants and having to water them, but since we've been stuck at home, I thought I would be successful this time around. 

And I was for a few days.  I planted basil, cilantro, and jalapeno peppers.  I started the seeds indoors, and I did a great job of watering them.  They all sprouted and seemed like they were starting to grow nicely. 

Once I moved them outside, however, I completely forgot about them, and they withered away.

I will try again, however, because I love cilantro and basil.

Ohana Hale Marketplace is an indoor hodge podge of all things Hawaii.  You can find smoothies, poke bowls, pizza, sandwiches, sushi, clothing, handbags, jewelry, ukuleles, facemasks, etc.  It's a great place to support local entrepreneurs, and it has some of the tastiest grinds in town.
