Mango Bread Recipe

A friend of mine had given me a bunch of mangoes that were already starting to get black spots, so I immediately turned to allrecipes.com to find a mango bread recipe.

It was my first time making mango bread, and I was so happy that everyone in my family really liked it.


Mango Bread (recipe credit Allrecipes):

Ingredients:
  • 2 c flour
  • 2 t baking soda
  • 1/2 t salt
  • 2 ts ground cinnamon
  • 1/2 c butter, softened
  • 1/2 c vegetable oil
  • 1 1/2 c sugar 
  • 3 eggs
  • 1 t vanilla extract
  • 3 c peeled, seeded and chopped mango
  • 1/2 cup raisins
  • 1/2 cup shredded coconut

Directions:
  • Spray two 9x5 inch loaf pans with cooking/baking spray.
  • In a large bowl, combine the flour, baking soda, salt, and cinnamon.  
  • In a separate large bowl, mix the butter, oil and sugar until fluffy. 
  • Stir in eggs one at a time.
  • Stir in vanilla.  
  • Combine wet mixture with the flour mixture.  
  • Fold in the mango, raisins, and coconut; do not over mix!
  • Let stand for 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). 
  • Bake in preheated oven for approximately 55 minutes.

  1. EXCELLENT recipe! The only thing I did different was to smash, vs. cubing Mango
