Chocolate Chip + Reese's Blondies

I love blondies, and I love Reese's, so I sought out some Reese's minis just so I could make some!

I found a super simple recipe for Chocolate Chip Blondies, made a few tweaks, and the end result is so delish!!

Chocolate Chip + Reese's Blondies

Ingredients:
  • 1-1/2 c packed brown sugar
  • 1/2 c butter, melted
  • 2 large eggs
  • 1 t vanilla extract
  • 1-1/2 c flour
  • 1/2 t baking powder
  • 1/2 t salt
  • 1 c chocolate chips
  • 1 7.6 oz bag Reese's Minis Unwrapped, chopped

Directions:
  • In a large bowl, mix together the brown sugar, butter, eggs and vanilla.
  • Mix in the flour, baking powder, and salt.
  • Stir in 1/2 c chocolate chips and half of the chopped Reese's minis.
  • Spread batter into a parchment-lined 13x9-in. baking pan. 
  • Sprinkle on remaining chocolate chips and chopped Reese's minis.
  • Bake at 350°F for approximately 18-20 minutes.
  • Cool completely before cutting into bars.

Reese's Peanut Butter Cup-Stuffed Chocolate Chip + Reese's Pieces Cookies

I love Reese's Peanut Butter Cups, so I decided to make Reese's Peanut Butter Cup-Stuffed cookies.

For the cookie, I made a combo chocolate chip + Reese's Pieces cookie.


You can make the cookie as big or as little as you want (I made them pretty big).  I also chilled the Reese's Peanut Butter Cups ahead of time so they wouldn't melt as I prepped the cookies.

The Reese's Peanut Butter Cup center is such a sweet surprise!

 
Reese's Peanut Butter Cup-Stuffed Chocolate Chip + Reese's Pieces Cookies 

Ingredients:
  • 1 c butter, softened
  • 1/2 c sugar
  • 1/2 c brown sugar, firmly packed
  • 1 large egg
  • 1 t vanilla extract
  • 2 c flour
  • 1/2 t baking soda
  • 1/8 t salt
  • 1 c semisweet chocolate chips
  • 1 c Reese's Pieces
  • 24 Reese's Peanut Butter Cup Miniatures (chilled and unwrapped)
Directions:
  • Preheat oven to 350°F.
  • In a large bowl, cream butter and sugars.
  • Beat in egg and vanilla.
  • In a separate medium bowl, mix together the flour, baking soda and salt.
  • Slowly stir the flour mixture into the sugar mixture.
  • Mix in chocolate chips and Reese's Pieces
  • For each cookie, take 2 teaspoonfuls of dough and wrap around Reese's Peanut Butter Cup Miniatures.
  • Place onto parchment-lined baking sheet.
  • Bake approximately 13 to 15 minutes.

Reese's Peanut Butter Cup Brownie Pie Recipe

It's been mentioned many times before how much I love Reese's Peanut Butter Cups, so the morning after Halloween, I didn't hesitate to search for all of these peanut buttery-chocolaty delights!

I used them to make this Reese's Peanut butter Cup Brownie Pie.

I tweaked this One-Bowl Brownie recipe for the brownie pie.  I omitted the walnuts and the second cup of chocolate chips, poured the batter into a pie pan, and baked at 350 degrees Fahrenheit for 35 minutes.

For the frosting, I took 1 c chocolate chips + 2 T peanut butter and microwaved on high for 60 seconds.  I stirred until smooth, then spread onto the brownie pie.

I then chopped up Reese's Peanut Butter Cups (you can place them in the fridge while the brownie pie is baking so they firm up and are easier to chop) and sprinkled over the frosting.

You can place whole peanut butter cups on the frosting instead of chopping them up too, or even use a combo of whole / chopped Reese's.

This is one decadent brownie pie!
