Easy Lemonade Recipe

Whenever we go to the Farmers Market, I let my son pick out a fruit or vegetable of choice, and he has to consume it (or at least try it).

On a recent trip, he wanted lemons to make lemonade!

Even though my chef friend said "add water and sugar to taste," my son still looked up recipes and videos.

In the end, we ended up using the juice from 6 lemons (it turned out to be a little more than a cup), 6 cups of water, and 1 cup of sugar.  Originally we squeezed juice out of 5 lemons, but my son wanted the lemonade to be more tart, so we added the juice of one more lemon, and it turned out just right.

He had so much fun making lemonade.  I'm eager to see what he picks out next from the Farmers Market!

Faux Sushi Recipe

This is another post from my old blog that I'm sharing - Faux Sushi!


It was for a campaign I did with FruitaBu, but you can really use any type of fruit rolls.

They turned out to be so much fun to both make and eat!

The boys helped putting the fish and licorice on and in the "sushi," and they couldn't wait to eat them!

Faux Sushi

Ingredients:
  • 6 c puffed rice cereal
  • 4 c miniature marshmallows
  • 4 T butter
  • 2 boxes of FruitaBü Fruit Rolls
  • A variety of candy: cherry twists (such as Twizzlers), gummy worms, licorice and Swedish fish
Directions:
  • In a small saucepan, melt the marshmallows with the butter over low heat. 
  • Stir in the rice cereal until coated.  
  • Pour the mixture into a greased pan, flatten, and cut into small rectangles, or mold into rolls.
  • Get creative to make the "sushi" - add Swedish fish on top or licorice in the center, wrapping each piece with slices of fruit rolls to act as the seaweed.

Oreo Peanut Butter Brownie Recipe

The other day I was browsing through Gem's Twitter feed, and I came across this tweet from @SarahBMock that she retweeted: 



Everything about this recipe was calling my name - brownies, peanut butter, and oreos!

Gem suggested that I make it for our next get-together, but I couldn't wait that long, so I made it that very night. :)

Although @SarahBMock used traditional Oreos in her recipe, I only had the Reese's Mini Oreos on hand (thanks to Gem!) so I used those instead, placing two in each muffin liner.




Then I put a small dollop of peanut butter on top of each Oreo...


and then placed two more Oreos on top of each dollop of peanut butter.


I made my brownie mix, then placed about  2 1/2 Tablespoons of brownie batter into each muffin liner.


After baking them at 350 degrees for 20 minutes, they were done!


My brownies did not come out as pretty as @SarahBMock's, but trust me, they were delicious!! Oreos come in many different flavors now, and I'm sure any flavor will work wonderfully.

Since I made these for my hubby's office, I dusted them with Confectioner's sugar to make them look a little more presentable.

Pizza Won Ton Cups

A super easy meal that the kids can help with - Pizza Won Ton Cups!

Simply place a won ton wrapper in each cup of a muffin tin that's been sprayed with non-stick cooking spray.

Then add whatever ingredients you (or your kids) like - we added mushrooms, olives, pepperoni, mozzarella cheese, and sauce.

Bake for about 15 minutes (or until the cups are golden brown) at 350 degrees Fahrenheit.

Kids will enjoy making their own "pizza cups," and this recipe is a great way to use up leftovers.
