Tater Tot Baked Dip

I bought an enormous bag (8 lbs!) of tater tots, and accidentally bought 8 too many boxes of cream cheese, so I decided to look up recipes that included tater tots and cream cheese.  

I found lots of tater tot dip recipes that used sour cream, so I decided to just sub the sour cream with cream cheese (as I have done with many dips before).

For this Tater Tot Baked Dip, simply chop 3 cups of thawed tater tots, and mix it with 2 blocks of softened cream cheese, 1 cup of shredded cheddar cheese, and 1 packet of Lipton Onion Soup Mix.

Pour the contents into a pie plate, top with an additional cup of shredded cheddar cheese, and bake for 30 minutes at 375 degrees Fahrenheit.

Garnish with green onions, and serve warm with crackers.

Next time I'm adding bacon!

Macho Nacho Dip

For a quick and easy party dip, make this Macho Nacho Dip!

Simply take 2 cans of refried beans and spread the beans on the bottom of a 9x13 pan.

Next spread 2 cups of sour cream over the beans, followed by 2 cups of salsa, 2 cups of shredded chicken, 1/2 a large onion, chopped, 2 cups of shredded cheddar cheese, 1/2 cup of sliced olives, and 1/2 cup of chopped avocado.

Bake at 350 degrees Fahrenheit for 20 minutes, then garnish with sliced green onions.  Serve with your favorite tortilla chips.

The recipe is really versatile - I've made the dip with guacamole, tomatoes, and even cream cheese and chili instead of sour cream and salsa. 

It's the perfect dip for game day!

Loaded Baked Potato Dip Recipe

Not too long ago I bought a box of Triscuits, and on the back of the box was a recipe for Loaded Baked Potato Dip.


I made a baked potato dip once before, but this recipe was different in the sense that it actually contained potatoes (or at least instant potatoes).

It sure was yummy.  Hard to go wrong with bacon, cream cheese, sour cream, and green onions!

If you love baked potatoes, definitely give this dip a try!  

Loaded Baked Potato Dip (recipe slightly adapted from Snackworks.com)

Ingredients:
  • 1/2 c instant potato flakes
  • 1/2 c water
  • 1 c sour cream
  • 4 oz. cream cheese, softened
  • 2 green onions, sliced, divided
  • 1 c shredded cheddar cheese
  • 2 strips bacon, crumbled
Directions:
  • Preheat oven to 350°F.
  • Mix potato flakes and water in large bowl; let stand 5 min.
  • Mix in the sour cream, cream cheese, and half of the green onions.
  • Spread mixture into 9-inch pie plate.
  • Sprinkle with shredded cheese and crumbled bacon.
  • Bake 15 to 20 minutes.
  • Sprinkle with remaining onions.

Kamaboko & Crab Dip

For a recent get-together I made Kamaboko and Crab Dip based on this recipe from Spork and Pan.

It turned out yummy, but next time I'll add more green onions, and less crab (or maybe eliminate the crab altogether - I just had extra from making these Crab and Cream Cheese Wontons so I wanted to use up the crab).



Kamaboko & Crab Dip (adapted from Spork and Pan)

Ingredients:
  • 1 6 oz pkg kamaboko, shredded
  • 1 6 oz pkg imitation crab meat, chopped
  • 1/2 c sour cream
  • 1/2 c mayo
  • 1/4 c chopped green onions
Directions:
  • Combine all ingredients and chill for at least 30 minutes.  
  • Serve with crackers.

Cookie Dough Dip Recipe

I had to make something for my son's class party, and since I was too lazy to bake, I decided to make this Cookie Dough Dip based on this recipe from Taste of Home.

It was super quick and easy to make, and it was a hit at the party!


Cookie Dough Dip (recipe credit Taste of Home):

Ingredients
  • 1 8oz pkg cream cheese, softened
  • 1/2 c butter, softened
  • 3/4 c confectioners' sugar
  • 2 T brown sugar
  • 1 t vanilla extract
  • 1 c miniature chocolate chips
  • Graham crackers or Nilla Wafers
Directions
  • In a medium bowl, beat cream cheese and butter until light and fluffy. 
  • Add in the sugars and vanilla; stir until smooth. 
  • Mix in the chocolate chips.  
  • Serve with graham crackers and Nilla wafers.

Apple Brickle Dip

One of my sons had a craft activity for school in which we had to bring in an apple, and since my husband was going to Costco, we bought one of those gigantic bags of apples.

And then we had a gigantic bag of apples minus one sitting on the counter for days.

So I decided to make an Apple Brickle Dip!

It's a great way to get the kiddos to eat apples!


Apple Brickle Dip

Ingredients:
  • 1 8oz package cream cheese, softened
  • 2 t vanilla extract
  • 3/4 c brown sugar
  • 1 8oz package Bits `O Brickle
Directions
  • Combine first 3 ingredients
  • Mix in Bits `O Brickle, reserving about 1/4 c to sprinkle on top of dip
  • Sprinkle remaining Bits `O Brickle on top of dip
  • Chill for at least 30 minutes before serving
  • Serve with sliced apples
