Another Breakfast Muffin Recipe




Here is another breakfast muffin recipe that is yummy and packed with nutrients:

Breakfast Muffins

Ingredients

  • 1 c vanilla soy milk
  • 1 c old-fashioned oats
  • 1 egg
  • 1/4 c vegetable oil
  • 1 c flour
  • 1/4 c organic coconut sugar
  • 2 t baking powder
  • 1/4 c chia seeds
  • 1/4 c ground flax seeds
  • 1 c chocolate chips
  • 2 T protein powder (I used Truvani Banana Cinnamon)

Directions

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine milk and oats.
  • Mix in the sugar, egg, and oil.
  • In a small separate bowl, combine the flour and baking powder.
  • Stir flour mixture into oatmeal mixture.
  • Stir in the flax seed, chia seeds, chocolate chips, and protein powder.
  • Pour batter into prepared muffin cups until they are 2/3 full.
  • Bake for 15-17 minutes, until a toothpick inserted into the center of a muffin comes out clean.

It's also perfect for afterschool snack or even dessert!

Breakfast Muffin Recipe

I've been experimenting with Breakfast Muffin recipes lately since one of my kids likes to just eat something quick, and this recipe is pretty versatile!

 Ingredients:
  • 1/2 c butter, softened
  • 1/2 c sugar
  • 1 large banana, mashed
  • 2 eggs
  • 1/2 c yogurt
  • 2 c almond flour (you can sub with all-purpose)
  • 1 t baking powder
  • 1 t baking soda
  • 1/2 c flax seeds
  • 1 c chocolate chips
  • granola (optional)
Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • Mix butter and sugar in a large bowl until creamy.
  • Mix in banana, eggs, and yogurt.
  • In a separate medium bowl, combine almond flour, baking powder, baking soda, and flax.
  • Stir dry ingredients into wet ingredients.
  • Stir in chocolate chips.
  • Pour batter into cups of prepared muffin tin, approximately 3/4 full for each cup.
  • Top each cup with granola.
  • Bake for 11 minutes, then increase temperature to 375 degrees Fahrenheit and bake for 5 more minutes, to get the tops golden brown. 
These muffins are great for breakfast, an afterschool snack, or even dessert!

You can also mix in chia seeds, hemp seeds, protein powder, and other ingredients you may have on hand.

Canadian Bacon and Egg Cups Recipe

I love making hot breakfasts for the kids (especially because I love to eat hot breakfasts), but who has time to make a hot breakfast every morning? 

I definitely don't have the time, which is why I make savory several batches of breakfast muffins on the weekend so we can just heat them up every morning. 

Not too long ago I shared an easy Savory Breakfast Muffin Recipe, and here is another super easy recipe.

Simply put Canadian Bacon in each cup of a muffin tin and form a "cup" (I've used deli turkey and ham before in place of Canadian Bacon), scramble and egg in each cup, and top with cheddar cheese.

Bake for 25 to 30 minutes at 350 degrees Fahrenheit, and they're done!

You can sprinkle on some parsley (pictured above) or chives for color.

I made 4 batches of these breakfast cups, and they store nicely in the freezer!

Next batch I'm going to try and add veggies - onions, spinach, and/or mushrooms.
