Savory Breakfast Muffin Recipe

In an attempt to give my kids something other than cereal or waffles for breakfast every morning before school, I decided to make several batches of Savory Breakfast Muffins (aka Egg Muffins).

They are simple to make, and very versatile.

I simply cracked an egg into each cup of a muffin tin (I used a silicone muffin pan - baked eggs seem to be easier to remove from silicone pans), added some turkey and cheese, and scrambled everything up in each cup.

I baked at 350 degrees Fahrenheit for 25 minutes, and when they were done I sprinkled some parsley on top - just for color.

You can really add anything into each egg cup - bacon, onions, mushrooms., etc.

Serve with some turkey sausage and fruit on the side for a hearty breakfast, or make several batches to freeze so you can pop them out and heat up in the microwave for a quick and easy hot meal that's perfect to grab-and-go (great for those days when the kids wake up late and you're all rushing out the door!).
