Rocky Road Bars Recipe

I had a bag of mini marshmallows that I've been wanting to use up for a while, so I decided to make Rocky Road Bars!

They were very quick and easy to make!  And so yummy!

I left the bars in the oven with the marshmallows a little too long, as they all melted, so next time I'll either put them back into the oven for just a minute, or maybe not at all, so the marshmallows retain some of their shape.

Rocky Road Bars

Ingredients:
  • 2 c chocolate chips
  • 6 T butter, softened
  • 1 1/2 t vanilla extract
  • 2 large eggs
  • 1 1/2 c flour
  • 1 1/2 t baking powder
  • 1 c sugar
  • 2 c miniature marshmallows
  • 1 1/2 c coarsely chopped walnuts
Directions:
  • Preheat oven to 375° F.
  • Heat 1 cup chocolate chips in a microwave-safe bowl for 60 seconds on high.
  • Beat in sugar, butter, vanilla, and eggs.
  • Combine flour and baking powder in a separate small bowl. Stir into chocolate mixture.
  • Spread batter into prepared 9x13 baking pan.
  • Bake 16-20 minutes.
  • Remove from oven, and immediately sprinkle with marshmallows, nuts, and remaining chocolate chips.
  • Return to oven for 2 minutes or just until marshmallows begin to melt.
  • Cool completely before cutting into bars.

Oatmeal Chocolate Chip Cookie Bars

I love making bar cookies, mostly because it takes less time to make than individual cookies.

Last week I made these Oatmeal Chocolate Chip Cookie Bars.  Oatmeal Chocolate Chip Cookies are my favorite kind of cookies, and I guess I could've used my favorite recipe to make these bars, but instead I found one that was slightly different, and had a layer of chocolate chips in the middle.

Yum!

Oatmeal Chocolate Chip Cookie Bars

  • 1 t baking powder
  • 1 1/2 c flour
  • 2 c rolled oats
  • 2 c chocolate chips
Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl cream together the butter and sugars.
  • Mix in eggs and vanilla.
  • Stir in the salt, baking soda, baking powder, flour, oats, and 1 cup chocolate chips.
  • Spread 1/2 of the mixture into a prepared 9x13 pan.
  • Sprinkle remaining cup of chocolate chips on top.
  • Spread remaining cookie mixture on top of chocolate chips.

Reese's Peanut Butter Cup Minis Cookie Bars

Since I was meeting a friend for lunch one day recently, and I know how much she loves Reese's Peanut Butter Cups (almost as much as I do), I decided to make these Reese's Peanut Butter Cup Minis Cookie Bars for her.

They are super easy to make - just take your favorite chocolate chip cookie recipe (for this recipe I used the Original Nestle Toll House Chocolate Chip Cookie recipe), and instead of 2 cups of chocolate chips, I used only 1 cup + 1 cup of Reese's Peanut Butter Cup Minis.

I baked at 350 degrees Fahrenheit in a 9x13 pan for approximately 25 minutes.  As soon as they were done I simply placed more Mini Reese's and Chocolate Chips on top.

If you love Reese's PB Cups, this is a must-try recipe!

Golden OREO-Stuffed Blondies Recipe

I love Golden OREOs.  They are my favorite type of OREO.

So one day I figured stuffing Blondies with Golden OREOs would be just as good as stuffing brownies with regular OREOs

To make them, just take any Blondie Recipe (I used this recipe from the Food Network Kitchen), place OREOs in the middle of the batter, and bake.

YUM!

Golden OREO-Stuffed Blondies (recipe adapted from the Food Network Kitchen)

Ingredients
  • 1 1/2 c firmly packed brown sugar
  • 1 c unsalted butter, melted
  • 2 1/4 c flour
  • 3/4 t baking soda
  • 1/2 t fine salt
  • 2 large eggs
  • 1 t vanilla extract
  • 20 Golden OREOs
Directions
  • Preheat the oven to 375 degrees F.
  • Mix together the melted butter and brown sugar in a small bowl.
  • In a separate medium bowl, combine the flour, baking soda, and salt.
  • Beat the eggs and vanilla into the sugar mixture.
  • Add the flour mixture to the sugar mixture and stir until a smooth.
  • Spread half the batter in a prepared 9x13 prepared baking dish.
  • Place Golden OREOs on top of the batter.
  • Pour remaining batter over OREOs.
  • Bake approximately 20 to 25 minutes.
