Oatmeal Chocolate Chip Cookies

I love to bake cookies, and for the longest time I only baked chocolate chip cookies, until I tried this cookie recipe from Quaker Oats.  It's actually a recipe for oatmeal raisin cookies, and instead of raisins I simply used chocolate chips.

YUM!!!




Oatmeal Chocolate Chip Cookies (recipe credit and adapted from Quaker Oats)

Ingredients:
  • 1/2 c (1 stick) plus 6 T butter, softened
  • 3/4 c firmly packed brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 1 t vanilla
  • 1 1/2 c flour
  • 1 t baking soda
  • 1 t ground cinnamon
  • 3 c old fashioned uncooked oats
  • 1 c chocolate chips
Directions:
  • Heat oven to 350°F.
  • In a large bowl, beat butter and sugars until creamy.
  • Add eggs and vanilla; mix well.
  • In a separate medium bowl combine flour, baking soda, and cinnamon; mix well.
  • Add flour mixture to sugar mixture and combine well.
  • Add in oats and chocolate chips; mix well.
  • Drop by tablespoonfuls onto parchment-lined cookie sheets.
  • Bake approximately 10 minutes or until golden brown.
  • Cool completely on wire racks.
