A Night with Michael Mina

One of my favorite restaurants on the island is Mina's Fish House at the Four Seasons Oahu, where Chef Michael Mina initiated the concept of the Fish Sommelier.

On Friday, the media was invited to A Night with Michael Mina, where guests indulged in a thoughtfully-crafted tasting menu highlighting local seafood and dishes with internationally-inspired elements.

Several dishes were served family-style - the poke, burrata, scallops, and prawns.  I thought the poke was seasoned perfectly, with a harmonious blend of sweet, savory, salty, and spicy components.  

Everyone commented on just how enormous the burrata was.  It was creamy, and indulgent, and I couldn't stop eating it with the pita croutons.

I love scallops and I love bacon, and together they are great match!

The kataifi offered a delicate, yet crunchy contrast to the tender prawns.

Everyone could choose their own entree, and I chose the agnolotti.  I loved the stuffed pasta, and I would've been happy with just the pasta, but the addition of the lobster, Parmesan, and truffle really elevated the dish, adding levels of umami.

The tasting menu ended with two delightful desserts.  The shave ice was so refreshing, and the Chocolate Caramel Crunch was reminiscent of a nostalgic candy bar - so delicious!

At the end of the night, we were gifted with a copy of his most recent cookbook, My Egypt, which dives into Chef Michael's roots.

Although this special event was one-night only, the daily dinner menu still offers guests amazing line-to-table delicacies and signature seafood dishes.

Noe

Refreshing Mocktails!

Noe at the Four Seasons Resort O`ahu at Ko Olina never disappoints.

And neither does their signature Tagliatelle, which I order all the time.

The dish is chock full of umami from the truffles, mushrooms, and Parmigianno Reggiano, all of which give the perfectly al dente noodles so much flavor.  

Half Jidori Chicken

Two of my kids got the Half Jidori Chicken, which looked amazing.  It was served with white polenta, corn, spinach, chicken liver pate, and a smoked pancetta sauce.

Pescato del Giorno

The Fish of the day was Mahi, and it came with baked asparagus, broccoli puree, green olive, dried tomato, and celery tapenade.

One of my kids just wanted the Seared Squid appetizer for dinner.  

We also ordered the Burrata, another dish we order all the time we go to Noe, and we also got a side of the Charred Eggplant Caponata.

For quick and easy eats and drinks to-go while at the Four Seasons Resort O`ahu at Ko Olina, make a stop at Hokulea.

They offer coffees, fruit, cookies, pastries, yoguts, salads, sandwiches, and even charcuterie!

Since we had a $50 resort credit for a Kama`aina stay, we decided to pickup a bunch of snacks and drinks. 

We got some milks, chocolate muffins, and malasadas!  The baked goods are really delish, and perfect for when you want a sweet bite.

A Magical Staycation at the Four Seasons Resort Oahu at Ko Olina

In 2019 I decided to spend my birthday at Four Seasons Resort Oahu at Ko Olina.  After having such a fabulous time, I decided to make it a tradition to stay there for my birthday.

Well, we all know what happened in 2020, so as soon as I heard Four Seasons Resort Oahu would be opening up again this year, I knew I had to seize the opportunity, despite having some pandemic-related anxieties. 

Fortunately, as soon as our family arrived at the Four Seasons Resort Oahu at Ko Olina, my anxieties were eased.  The resort has implemented numerous safety measures, such as temperature checks, screening questions, self-serve lei, wristband keys, hand sanitizing stations, and more (you can see a quick Instagram Reel here for more details).

After a quick check-in, we arrived at our Junior Suite, which comfortably slept our family of 5.  A rollaway was set up in the room, and the sofa pulled out to a bed.

A sweet surprise awaited me in the fridge!

The natural tones of the decor were warm and inviting, and the sliding doors opened up to an amazing view of the lagoon from our lanai.

The Four Seasons really knows how to welcome all guests, including the littlest ones.

Kids are welcomed with stuffed toys, kid-friendly bath amenities, and treats!

I appreciated how masks, sanitizer, and wipes are available in guest rooms.  

Of note - all guest rooms and suites at the Four Seasons Resort Oahu use Needlepoint Bipolar Ionization technology, which is 99.4% effective at eliminating COVID on surfaces within 30 minutes.

Other amenities included Wi-Fi, 24-hour in-room dining, customizable beds, and more.   Be sure to download the Four Seasons app, which makes chatting with a concierge quick and easy.

Dining options are plentiful (you can read my posts on Noe, Hokulea, and La Hiki), and so are the activities.

You can visit one of several pools, go stand-up paddle boarding in the lagoon (Four Seasons offers them complimentary for guests to use), or walk the path throughout Ko Olina resort.

You can also go the Spa, take fitness classes, go canoe paddling, and more!

The views around the resort are just magical.  I really felt transported to another place and time, and it was just what I needed after over a year of no staycations or vacations.  

While we were on the beach, a monk seal came ashore (boundaries were set up to ensure no one got too close).

It was a too-quick staycation, but one that was very much needed.  I felt completely safe and relaxed, and despite the obvious changes, the excellent service was always present.  

The Four Seasons Resort Oahu at Ko Olina's dreamy views, incredible service, welcoming accommodations, and family-friendly dining options are just a few reasons why I highly recommend this amazing resort - whether you're visiting the island or just want to get away from it all.
