S’mores Brownie Recipe


S’mores have been on my mind since our stay at Bellows where we roasted marshmallows each night so I was very excited when I came across a recipe for S’mores Brownies on the Betty Crocker website. 

You could probably use any brownie mix or make them by scratch. All you need to make them s’mores brownies is by topping the freshly baked brownies with 2 cups mini-marshmallows and 8 graham crackers broken up. Broil for about 30 seconds. I recommend keeping a close eye so you don’t burn the topping like I did.



60 seconds was way too long! Lol!

Top with broken pieces of a Hershey’s bar or other chocolate. Let the chocolate set before cutting. Betty recommends 3 hours, but I found that to be torture so we cut in after dinner. I’d like to think the burnt crackers and marshmallows added to the authenticity of a campfire. All joking aside, the dessert was delicious!

S'mores Brownie Bites

I wanted to use up some marshmallows and graham crackers that were in our pantry, so I made S'mores Brownie Bites!

There's just something about the combo of chocolate, marshmallow, and graham crackers that's so delightful.

If you love S'mores, you'll love this super easy treat!


S'mores Brownie Bites

Ingredients:

  • 2 c chocolate chips, divided
  • 1/2 c butter
  • 3 large eggs
  • 1 1/4 c flour
  • 1 c sugar
  • 1 t vanilla extract
  • 1/4 t baking soda
  • 1 1/2 c mini marshmallows
  • 1/2 a sleeve of graham crackers, crushed

Directions:

  • Preheat oven to 350° F. 
  • Melt 1 cup chocolate chips and butter in a microwave-safe bowl for 90 seconds on high; stir until smooth.
  • Wait about 5 minutes until mixture has cooled, then stir in eggs (don't want them to get cooked in the hot butter/chocolate mixture!).
  • Stir in flour, sugar, vanilla, and baking soda.
  • Pour mixture into prepared mini muffin tin.
  • Top with marshmallows, remaining chocolate chips, and graham cracker crumbs (I averaged 3 marshmallows and 3 chocolate chips on each muffin cup).
  • Bake for 12 minutes.
