Giant Reese's S'mores Skillet Cookie


I saw a picture in a magazine of a S'mores Skillet Cookie, and I decided to make one, but with my all-time favorite candy - Reese's Peanut Butter Cups!

I used the same recipe for the skillet cookie that I used a few months ago, and I simply added a layer of s'mores ingredients (Reese's, marshmallows, graham crackers) in the middle and on top.

It is definitely a decadent treat, especially if you top it with ice cream and chocolate syrup!

Giant Reese's S'mores Skillet Cookie

Ingredients:
  • 1 c butter, softened
  • 1 c brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 1 t vanilla
  • 2 c + 2 T flour
  • 1 t baking soda 
  • 1 1/2 c chocolate chips
  • 1 sleeve graham crackers, crushed
  • 1 cup mini marshmallows
  • 1 11 oz bag Reese's Miniatures, chopped

Directions:
  • Preheat oven to 325 degrees Fahrenheit.
  • Combine the sugars and butter until creamy.
  • Mix in eggs and vanilla.
  • Stir in flour and baking soda.
  • Mix in chocolate chips.
  • Pour 1/2 the dough into 12-inch cast iron skillet.  
  • Layer 1/2 of the graham crackers, mini marshmallows, and chopped Reese's.
  • Spread remaining dough on top.
  • Bake at 325 degrees for approximately 25 minutes. 
  • Top with remaining graham crackers, mini marshmallows, and chopped Reese's, and bake for 7-10 more minutes, until marshmallows are golden brown.

Optional: Top with ice cream, more crushed Reese's, and chocolate sauce!

Chocolate Chip + Reese's Blondies

I love blondies, and I love Reese's, so I sought out some Reese's minis just so I could make some!

I found a super simple recipe for Chocolate Chip Blondies, made a few tweaks, and the end result is so delish!!

Chocolate Chip + Reese's Blondies

Ingredients:
  • 1-1/2 c packed brown sugar
  • 1/2 c butter, melted
  • 2 large eggs
  • 1 t vanilla extract
  • 1-1/2 c flour
  • 1/2 t baking powder
  • 1/2 t salt
  • 1 c chocolate chips
  • 1 7.6 oz bag Reese's Minis Unwrapped, chopped

Directions:
  • In a large bowl, mix together the brown sugar, butter, eggs and vanilla.
  • Mix in the flour, baking powder, and salt.
  • Stir in 1/2 c chocolate chips and half of the chopped Reese's minis.
  • Spread batter into a parchment-lined 13x9-in. baking pan. 
  • Sprinkle on remaining chocolate chips and chopped Reese's minis.
  • Bake at 350°F for approximately 18-20 minutes.
  • Cool completely before cutting into bars.

Reese's Peanut Butter Cup Minis Brownies



This was one of my favorite brownies - Reese's Peanut Butter Cup Minis Brownies.  I just love the combo of peanut butter and chocolate!

It's an easy one-bowl recipe too! 


Reese's Peanut Butter Cup Minis Brownies

Ingredients:

  • 1 c chocolate chips
  • 1/2 c butter
  • 3 large eggs
  • 1 1/4 c flour
  • 1 c sugar
  • 1 t vanilla extract
  • 1/4 t baking soda
  • 2 c Reese's Peanut Butter Cup Minis, chopped and divided
Directions:
  • Preheat oven to 350° F. 
  • Line a 13x9-inch baking pan with parchment paper.  
  • Melt chocolate chips and butter in a microwave-safe bowl for 90 seconds on high; stir until smooth.
  • Wait about 5 minutes until mixture has cooled, then stir in eggs (don't want them to get cooked in the hot butter/chocolate mixture!).
  • Stir in flour, sugar, vanilla, and baking soda.
  • Mix in 1 cup Reese's Minis.
  • Top with remaining Reese's Minis.
  • Spread mixture in prepared pan.
  • Bake 18-22 minutes.
