Pumpkin Treats at Zippy's in November

This month, you'll find lots of pumpkin treats on special at Zippy's!  As a Zippy's Ambassador, I was fortunate to try out the following:

Pumpkin Coffee Cake Square


The Pumpkin Coffee Cake Square was so moist, and I just loved the streusel crumb topping!


Pumpkin Bread Pudding


I love Zippy's Bread Pudding, so the Pumpkin Bread Pudding is perfect for the season! The pumpkin flavor is so pleasant!

Other pumpkin treats available this month are Pumpkin Pie, Pumpkin Cheesecake (Nov. 19 to Nov. 28), and Pumpkin Chiffon Pie (Nov. 23 to Nov. 25).   

Also on special is a classic comfort food pairing - Tomato Bisque and Grilled Cheese! I just loved this special - there's something just so satisfying about grilled cheese and tomato bisque. Zippy's Tomato Bisque was very smooth and flavorful!

Honolulu Cookie Company's Pumpkin and White Chocolate Pumpkin Cookies

`Tis the season for all things pumpkin!

I love it whenever Honolulu Cookie Company releases new collections and flavors, and just in time for Fall are two new shortbread cookie flavors:  Pumpkin and White Chocolate Pumpkin.

I was fortunate to receive a Fall Pumpkin Box (it resembles a cute pumpkin!), which includes 3 cookies of each new flavor (a Fall Window Box with 12 cookies in 4 flavors is also available).


I really enjoyed both cookies, each reminiscent of some of my favorite fall desserts. You can just smell the cinnamon and nutmeg as you open each cookie! I loved the White Chocolate-dipped cookie. The creamy chocolate adds another layer of sweetness that's just irresistible!

Pumpkin Spice Cake Recipe


Pumpkin Spice Cake is my go to dessert when I am short on time because it's easy to make and still super yummy. 

Start by mixing 1 box of spice cake mix with 3 eggs, 1/2 cup sugar, 1/4 cup brown sugar, 3/4 cup oil, and 1 15oz can of pumpkin.  Pour into a greased 9x13 pan and top with a mixture of 1/2 cup chopped nuts, 1/4 teaspoon cinnamon and 1/4 cup sugar.  Bake at 350 degrees for 35-40 minutes. 

The cake is very moist and fluffy and the crumble on top makes it even more special.

Pumpkin Crunch. Not just for Thanksgiving.

Pumpkin crunch is easily my favorite dessert.  And for some reason, I'm really good at baking it. Sure, it's a super simple recipe, but if I must toot my own horn, I like mine better than everyone else's.

I was lucky enough to be gifted a copy of Hawaii's Best Local Desserts by Jean Watanabe Hee.  It's full of great recipes and baking tips.


The recipe calls for 1 can solid pack pumpkin (29oz); 1 can evaporated milk (13oz), 1 cup sugar, 3 eggs (slightly beaten); 1/4 tsp cinnamon, 1 box yellow pudding cake mix; 1 cup walnuts chopped; and 1 cup butter melted.  The recipe does have instructions for a cream cheese frosting, but I like my pumpkin crunch without it.


First, chop the nuts and set aside.


Mix together the pumpkin, evaporated milk, sugar, eggs, and cinnamon.


Line a 9 by 13 pan with wax paper.  Then, pour the mixture into the pan.


Evenly sprinkle the dry cake mix on top.


Add the nuts.  I use more than one cup.  Just enough to cover the pan.  Pat the walnuts gently into the cake mix.


Now, spoon the melted butter evenly covering the whole pan.  Bake at 350 degrees for about 50-60 minutes.


After you take it out of the oven, use a cookie sheet to cover the pan and turn both upside down.  Now the pumpkin crunch should be on the cookie sheet.  Peel off the wax paper.  Let it cool before cutting into squares.  Keep refrigerated.
