Make Your Own Mochi Ice Cream!


When I found this recipe on line I was amazed how simple she made it look so I knew I had to try it.  The original recipe from Just One Cookbook can be found here with lots of great tips.  First you want to prescoop your ice cream into balls and freeze until they are very hard.


Next, whisk 3/4 cup of mochiko with 1/4 cup sugar.  Mix in 3/4 cup of water.  Loosely cover the bowl with plastic wrap and microwave for 45 seconds (1800w).  You may have to adjust time depending on your microwave.  Use a wet rubber spatula to stir the mochi mix.  Loosely cover and microwave for 45 seconds.  Again, use a wet rubber spatula to stir.  Microwave for another 30 seconds. 
Put the mochi on parchment paper that has been dusted with potato starch.  Sprinkle some potato starch on the mochi before you begin rolling once the mochi has cooled a little.  I was supposed to have refrigerated the mochi for 15 minutes, but I was too excited so I missed this step.  I used a round cutter to cut out mochi circles and added plastic wrap in between each layer. 


You’re almost there!  Work quickly to wrap the ice cream ball in the mochi.  Use the plastic wrap to cover your mochi ice cream and twist to help keep its shape.  Refreeze and when you are ready to eat your amazing mochi ice cream, let them sit out for a minute or two to soften.  Enjoy!

Kansai Yamato

Kansai Yamato, creator of a variety of mochi confections, is located in Moanalua 99, and we decided to order some sweet treats from there.

Mochi Ice Cream
The Mochi Crepe with Ice Cream is basically a large, flattened piece of mochi, piled high with a scoop of vanilla ice cream, strawberries, whipped cream, and a drizzle of chocolate syrup.

I'm not a huge fan of mochi, but I did give this a try, and it was pretty good (although I did think there was just way too much whipped cream).  My youngest son loved it.

My two older kids opted for Mochi Ice Cream. They each got 1 OREO and 1 Chocolate.  The pieces were pretty huge, and they would have been easily filled up with just 1 piece each.

Unfortunately, service was lacking, and a couple of the employees working were not very friendly, so I probably won't be going back any time soon.
