4th Of July Finger Jello



My intention was not to make a 4th of July inspired dessert, but that's what happened when I ran out of time and didn't let each layer set long enough.  As a result, the top layer of blue jello mixed with the condensed milk layer.  After emitting a few expletives, I decided to just go with it and mixed it for a marble effect.

Rainbow Finger Jello Recipe





If you are on a diet, Instagram can be really bad for you.  But it can also be very inspiring!  One account that I follow posted some beautiful pictures of her rainbow jello and I felt moved to try it.  My son loves jello so I thought it would be a fun treat for him.  

There are a variety of recipes on the web, but I decided on one that uses 4 packages of jello (3 ounces each).  I decided to use blueberry, lime, lemon, and cherry.  Besides the jello, you will need 6 envelopes of Knox unflavored gelatin, and 1 cup sweetened condensed milk.



First, mix the 1 cup condensed milk with 1 cup of hot water.  In another bowl, dissolve 2 packets of gelatin with 1 cup hot water.  Mix in the gelatin with the milk mixture.



In a separate bowl, dissolve jello and 1 packet of gelatin in 1 1/2 cups hot water.  What I found helpful was to measure the hot water in the measuring cup and then dissolve the jello and gelatin.  Let cool.  

Coat a 9x13 pan with cooking spray.  Pour the jello into the pan and put in the refrigerator, letting it set for about half an hour.  




As the jello is setting, measure a cup of the milk mixture and set aside.  In the measuring cup, measure 1 1/2 cups hot water and then dissolve the next jello and 1 packet of gelatin.  Let cool.   

After the first layer has set, pour the milk mixture making the next layer.  Refrigerate for 15 minutes.  When the jello is cool, pour over the milk mixture, creating a third layer.  You want to make sure the jello is cool because if it is too hot it will melt the milk layer and your color will not be solid but milky.  



Repeat, ending with jello as the last layer. 



Such a pretty treat!  If you want to be super fancy, you can make the rainbow jello in individual clear cups!  Or get out your cookie cutters!

Strawberry Creamsicle Jello

Girl's Day is tomorrow (Tuesday). If mochi is not your thing, or you don't have the time to make it, here's the next best thing - Strawberry Creamsicle jello! All you need is one 6 oz box of jello, water, and Coolwhip! Let it set overnight and it'll be ready when you wake up!

For best results: be sure the Cool Whip is completely melted in your jello mixture prior to putting it in the refrigerator.
