#GivingTuesday - Hawai‘i Food & Wine Festival's Mālama ‘Āina Campaign

The Hawai`i Food & Wine Festival's HFWF21 #GivingTusday campaign focuses on driving awareness about the importance of preservation and giving back as Hawai‘i faces pressing issues like:

  • Decline of our coral reefs (in the past 30 years approximately 50% of the world’s coral has been lost) which are critical to buffering against inclement weather and a valuable source of food, medicine and even jobs – Kulena Coral Restoration
  • Food insecurity where $3 billion annually is spent on importing over 80% of food consumed in our Islands – Hawai‘i Department of Agriculture
  • Loss of the Hawaiian language (in 1985 only 32 children under the age of 18 spoke the language) and important cultural traditions and
    practices since they were banned in 1896 – University of Hawai‘i Foundation

 

Now through Dec. 31, 2021 ALL donations made to Hawai‘i Food & Wine Festival will go directly to the 13 partner Mālama ‘Āina organizations: Hawai‘i Wildlife Fund, Ho‘okua‘āina, Hui Mālama i ke Ala ‘Ūlili, Kāko‘o ‘Ōiwi, Kipuka Olowalu, Kū-A-Kanaka, Kualoa Ranch, Kuleana Coral Restoration, Malama Loko Ea Foundation, Malama Maunalua, Paepae o He‘eia, Papahana Kuaola and Sustainable Coastlines.

 

Their goal for this year is to raise $32,500 for 13  Mālama ‘Āina partners.

Hawaii Food & Wine Festival: Hawaiian Airlines Presents Sweet & Savory

Yesterday I attended (as media) Hawaii Food & Wine Festival's Hawaiian Airlines Presents Sweet & Savory brunch event at the Hyatt Regency Waikiki Beach Resort & Spa.

I love brunch, and I loved the various sweet and savory dishes at this event.

I loved the Roadie (a meal in itself!), and really enjoyed the Lasagna (this was my first time ever having lasagna for brunch, and I hope it's not the last).  The Pozole was so comforting, and the Hot Cakes & Bacon were the perfect sweet & savory combo in a single dish.

The Coconut-Lime Leaf Oats had a big spicy kick, and the Raw Fish & Eggs were perfect for anyone wanting a light, yet satisfying bite.

The Ricotta Bombolini was very good - I had to restrain myself from eating multiple!

Although certain aspects of the #HFWF events had to change due to the pandemic, the mission to spotlight local ingredients and producers, and to support culinary and agricultural education, remains unchanged.

Hawaii Food & Wine Festival's Virtual Keiki in the Kitchen #HFWF20


This year, for obvious reasons, Hawaii Food & Wine Festival had to re-invent their annual Keiki in the Kitchen event to become a virtual one, and I think it turned out really well!

Adam Richman was a fantastic host (he's so great with kids!), and it was fun seeing other celebrity chefs on screen to decorate cupcakes, along with a few hundred youngsters who joined in on the virtual fun - many of whom were wearing costumes!  Cupcake kits were made available to purchase for pick-up at local Foodland stores, and kids could still register for free (without having to purchase cupcake kits) to join in and watch the event.



Founder Denise Yamaguchi, along with Co-Charis Chef Alan Wong and Chef Roy Yamaguchi were also on the Zoom, along with Chef Michelle Karr-Ueoka, who, along with Chef Alan and Chef Roy, helped judge the Localicious Recipe Contest.  

Even though this event was made virtual due to the pandemic, I hope they keep the virtual aspect of this kid-friendly event, as I imagine it would be such a fun activity for when we are able to gather with a bigger group of friends, and it's just convenient for kids (or parents) who like to avoid crowds.

Hawaii Food & Wine Festival's Pau Hana & Talk Story Virtual Event

 Last week Hawaii Food & Wine Festival held its first Virtual Event - a Pau Hana & Talk Story with:

  • Stephan Pyles, Stephan Pyles Concepts
  • Nancy Silverton, Mozza Restaurant Group
  • Ming Tsai, Blue Dragon
  • Lee Anne Wong, Papa‘aina at The Pioneer Inn
  • Roy Yamaguchi, Roy’s Restaurants

The event allowed the chefs to give their first-hand experiences of what the pandemic has done to their businesses as well as their lives in general, and we also heard about how they are coping and determined not to give up.  

They shared how they had to adapt and what they are trying to do to keep their businesses running and keep people employed.  From take-out and social media, to reinventing menus and operating at much smaller capacities, each of these chefs gave insight into what they've been focusing on and what they've had to do to prevent their restaurants from shuttering for good.

The struggle is real for them all, but they remained hopeful that kindness would prevail and that people will continue to support local - order takeout, tip big, buy extra (for lunch and dinner, neighbors, etc.), and avoid the delivery companies that take up to a 30% cut from the restaurants.

It was great to hear from these world-renowned chefs, and I look forward to future Hawaii Food & Wine Festival virtual events.

Hawaii Food & Wine Festival's 2019 Lineup - Tickets on Sale Now!

One hundred seventeen world-class chefs, 40 winemakers, and 25 mixologists will bring their talents together in paradise for the ninth annual Hawai‘i Food & Wine Festival (HFWF). The premier epicurean event in the Pacific will highlight Hawai‘i as a culinary destination for its cuisine and culture via a star-studded lineup over three-weekend program.  The Festival will host 17 events on Island of Hawai‘i, Maui, and O‘ahu from October 5 – 27, 2019, showcasing first-time and returning talent at HFWF’s highly-attended signature events and delectable tastings.
 
“Hawai‘i Food and Wine Festival brings top chefs from around the world for the largest food and wine event in the state,” says HFWF Chief Executive Officer Denise Yamaguchi. “Attendees from the U.S. mainland and abroad develop an appreciation of Hawai‘i’s unique culinary scene, offerings and traditions, and in return, we get to experience their culture through food and wine.”
 
The Festival celebrates the bounty of locally caught, grown and raised ingredients by inviting culinary masters to create dishes from a list of 100 local products. Co-founded by two of Hawai‘i’s own James Beard award-winning chefs, Roy Yamaguchi and Alan Wong, HFWF19 will attract more than 100 internationally-renowned culinary personalities including: Nyesha Arrington, Mike Bagale, Bobby Chinn, Serge Dansereau, Dean Fearing, Kwang Sic Jeon, Raphael Lunetta, Michael Mina, Masaharu Morimoto, Ming Tsai, Jonathan Waxman and Lee Ann Wong.
 
Winemakers from abroad, as well as from wine regions in the U.S., have confirmed their participation, pouring world-class vintages from France, Italy, Hawai‘i, California and more to perfectly complement the delectable dishes from our chefs.
 
Featured mixologists include local star Justin Park of Bar Leather Apron and Jen Ackrill of SKY and Top of Waikiki, along with returning festival favorites Tony Abou-Ganim (The Modern Mixologist, Las Vegas) and Julie Reiner (Clover Club & Leyenda, New York City). 
 
Now in its ninth year, HFWF has expanded from a 3-day festival with 30 chefs in Waikīkī to the state’s largest food and wine event with more than 150 international and resident talent featured across three islands during the month of October.

Two Young Hawaii Chefs Receive Grants from the Ment'or BKB Foundation

Thanks to the prestigious Ment’or BKB Foundation and the Hawai‘i Food & Wine Festival, two young Hawai‘i chefs are headed to stages—or apprenticeships—outside of Hawai‘i to hone their skills and broaden their horizons. Jeremy David of Honolulu and Kelsey Takara of Pearl City, received confirmation letters earlier this month from Ment’or BKB, a nonprofit dedicated to inspiring culinary excellence in young professionals. They are two of twenty-one grant recipients selected from across the country for the 2018-2019 grant program.
 
The two grants are funded by a donation Hawai‘i Food & Wine Festival made to Ment’or specifically for Hawai‘i applicants.
 
Selected from a competitive pool of applicants, the Ment’or Grant Program is designed to provide young, aspiring chefs who may not have the resources with unique opportunities to expand their training and skills. Through this initiative, established mentors from around the country and the world's top restaurants open their doors and provide invaluable access and training for young chefs.
 
Available to all young cooks in the U.S., the program awards one- to two-month grants both stateside and abroad, covering housing, transportation, salary and basic living expenses. Through this incredible initiative, grantees are able to learn new techniques, work with different products, as well as understand different styles of kitchen cultures and approaches to food and hospitality.
 
Hawai‘i Food & Wine Festival co-chairs Alan Wong and Roy Yamaguchi, as well as MW Restaurant chef Michelle Karr-Ueoka, are on Ment’or’s Culinary Council. Wong connected the two organizations. “Chefs need to travel to see new things, expand their awareness as to what’s going on out there and learn new possibilities,” says Wong. “We thought it would be great if we could offer chefs in our community the opportunity to stage in places outside Hawai‘i, to help them widen their world view, along with further developing their talent.” In 2017, HFWF donated $29,000 to fund two Ment’or grants for two chefs from Hawai‘i. Of that amount, $4,000 came from a fundraiser hosted by MW Restaurant.
 
ABOUT THE GRANTEES
 
Kelsey Takara is the pastry sous chef at Kak‘aako restaurant Piggy Smalls. A graduate of the Johnson & Wales–Denver culinary program, Takara found out about the grant opportunity just three days before the application deadline in 2017, so had to wait another year to apply. “Some things are worth waiting for,” he says. “I am super excited. Ment’or’s mission is to educate and advance American cuisine and restaurants, so I think it’s great that people in Hawai‘i have the opportunity through the Hawai‘i Food & Wine Festival.”
 
Grantees are responsible for securing their own stages at restaurants of their choice, and Takara hopes to work at a restaurant in Japan.
 
“I have Japanese roots so I want to learn more about the food, culture and history of Japan—that’s where my food tends to go, toward the Japanese influence,” says Takara, who has been to Okinawa twice, but has yet to visit Japan.
 
It’s a dream come true for Takara, who has been pursuing a culinary career since he was a junior at Pearl City High School and involved in what was then the Food Service department. This year it became the Academy of Culinary Arts.
 
Jeremy David is a graduate of the Kapi‘olani Community College Culinary Arts Program and in 2017, he was part of the six-member team that competed at the American Culinary Federation’s National Student Competition. He started taking culinary classes while a student at Kaimuki High School and from there “slowly grew into it.” What cemented his decision to pursue a culinary career was volunteering at HFWF events as a student at KCC. “It was a really good experience,” he says.
 
David hopes to do his stage in California—in the Bay Area or Los Angeles. To save up money, he has for the time being switched to working the front of the house at Ruth’s Chris Steak House. “It’s also a good experience learning the other side of the business,” he says.

Hawaii Food & Wine Festival: HMAA Presents Keiki in the Kitchen #HFWF18


Yesterday thousands gathered at the Hawaii Convention Center for Hawaii Food & Wine Festival: HMAA Presents Keiki in the Kitchen.

This family-friendly event offers all sorts of fun games, crafts, food, celeb chef photo ops, and so much more!  


Several of Hawaii Food & Wine Festival's world-renowned chefs were available for photos and autographs.



The Hawaii Gas Presents: Localicious Recipe Contest featured six finalists in two different age groups as they showcased their culinary skills.  





Rachelle Anne Ramelb (grades 9-12 winner), Adam Richman, Roselyn Lee (grades 4-8 winner) - Each winner received a 2-night staycation at Aulani, a Disney Resort & Spa!

The Queen's Health Systems Presents Celebrity Chef Fitness Challenge with Corey Campbell had keiki teaming up with chefs in fun competitions.


Hundreds signed up to decorate cookies with Food Network’s Ace of Cakes star Duff Goldman.




Several cooking Keiki Cooking Classes were held throughout the day with Chef Matt Young of Hula Grill Waikiki.  The kids made all sorts of yummy creations, such as Roasted Pumpkin Ravioli, and the famous Hula Pie!

There was a reading and signing by Eileen Wacker, author of several children's books, including Red Penguin and the Missing Sushi.  Her son, Ethan, star of Disney's Bizaardvark, as well as her daughter, Natalie, also joined in on the fun.   



There were lots of food and drink vendors on site, including the Zippy’s Presents Made in Hawaii Marketplace for Kids by Kids, through which public schools sold their locally-made products.

HMAA's keiki activity tent had all sorts of games, Kamehameha Schools' Sustainability Center offered hands-on cultural activities, and House Mart / Ben Franklin Crafts featured a variety of different craft projects.




At the end of the event was a Sunset Mele on the Rooftop screening of Ferdinand.

It definitely was a fun-filled day at Keiki in the Kitchen!
