Pepperoni Pizza Grilled Cheese

I have a lot of pepperoni on hand since I bought some at a warehouse club store.  Since we also had a lot of mozzarella cheese sticks on hand (also bought from the same warehouse club store), I decided to make a Pepperoni Pizza Grilled Cheese.

You simply make it like you would a regular grilled cheese.  If your cheese doesn't melt all the way by the time you're done grilling the sandwich, put it in the microwave for 30-60 seconds to get ooey gooey melty cheese.

Yum!

Tater Tot Waffle Grilled Cheese

I love tots.  And I love a good grilled cheese.

You can have them both at the same time in a Tater Tot Waffle Grilled Cheese Sandwich!

I actually made it once before, but have since learned how to make it better.

Simply take thawed tater tots, pack them in neatly and nicely into a waffle maker (if you don't pack them in, you risk the waffle falling apart).

Cook until crispy (about 9-10-minutes).

Make another tater tot waffle, cook until crispy, and place cheese on top of the waffle, (I used American cheese this time around), followed by the already cooked tater tot waffle.

Close waffle maker and cook until golden brown and nice and crisp.  Test out the texture with a spatula or fork.  Make sure it feels strong enough to hold up to picking up with your hands.  Of course, there is nothing wrong if you have to eat the tots and melted cheese with a fork.

Tater Tot Grilled Cheese

After making the Tater Tot Waffles, I stumbled upon several articles on how to make Tater Tot Grilled Cheese, so of course I had to give it a try.

Basically just make a tater tot waffle, open up the waffle maker and place some cheddar cheese (or your favorite kind of cheese) and bacon on top, place another tater tot waffle on top, and close the waffle maker.

That's it!

Instead of placing one waffle on top of another, I simply cut one waffle in half to make the grilled cheese.

I love a good grilled cheese, but when you replace the bread with a tater tot waffle, and add some bacon - it elevates the humble little sandwich into something so indulgent!
