Peanut Butter and Chocolate Chip Cookie Cups

We had some leftover sugar cookie dough from making the Minecraft Portal Cookies, so I decided to use them for Peanut Butter and Chocolate Chip Cookie Cups!


I placed 2 T of dough into mini muffin cups and baked in a preheated 350-degree Fahrenheit oven for 13-15 minutes.

Once done, with the back of a spoon, I created a "cup" to pour melted peanut butter (1/2 cup microwaved on high for 30 seconds), and sprinkled on chocolate chips.

Peanut Butter Chocolate Chip Cookies Recipe


For some reason we had a large amount of peanut butter jars in our pantry, so I decided to make Peanut Butter Chocolate Chip Cookies!

Is there any better combo than peanut butter and chocolate?  If you love this combo, you'll love these cookies.  They turned out crispy on the outside, chewy on the inside, with just enough peanut butter flavor to not overpower the entire cookie.

Peanut Butter Chocolate Chip Cookies

Ingredients:
  • 1/2 c butter, softened
  • 1/2 c peanut butter
  • 1 c packed brown sugar
  • 1/2 c white sugar
  • 2 eggs
  • 2 ts vanilla extract
  • 2 1/2 c all-purpose flour
  • 1 t baking soda
  • 2 c chopped chocolate chips
Directions:
  • Preheat oven to 375 degrees F.
  • In a large bowl, combine the butter, peanut butter, and sugars until creamy.  
  • Mix in eggs and vanilla. 
  • In a separate bowl, combine the flour and baking soda.
  • Mix flour mixture into the peanut butter mixture. 
  • Fold in chocolate chips.
  • Drop by tablespoonfuls onto a parchment-lined baking sheet. 
  • Bake for approximately 12 to 14 minutes.  Let cookies cool at least 2 minutes on cookie sheets before transferring to wire rack.
