Carrot Cake Sheet Cake Recipe

We bought a bunch of carrots from our local warehouse club store, which meant we ended up with lots of leftovers that I didn't want to go to waste.  So I made Carrot Cake Sheet Cake!

I used store-bought frosting since I didn't have the ingredients to make my own, but the cake still turned out moist and delish!

Carrot Cake Sheet Cake

Ingredients
  • 2 c flour
  • 2 c sugar
  • 2 t baking powder
  • 1 t cinnamon
  • ½ t baking soda
  • 3 c shredded carrots
  • 4 eggs
  • ¾ c vegetable oil
  • 1 t vanilla extract
  • 1 container store-bought cream cheese frosting
  • 1 c chopped walnuts
Directions
  • Preheat oven to 350 degrees Fahrenheit.
  • In a mixing bowl, mix together flour, sugar, baking powder, cinnamon, and baking soda.
  • In a separate bowl, combine oil, eggs, vanilla and shredded carrots.
  • Stir in dry ingredients to carrot mixture.
  • Pour batter into parchment-lined 9x13 pan and bake for 30-35 minutes.
  • Spread cream cheese frosting on completely cooled cake.
  • Sprinkle walnuts over frosting.

Trudeau Structure Round Cake Mold

Disclosure: complimentary product was provided for review purposes.

I must have been living on another planet, because I had never heard of silicone bakeware until now. Apparently, it's been around for a while, and there are many brands and variations out there.  So what's so great about silicone bakeware?  It's NON-STICK! All you need to do is butter the bakeware and you're ready to go. No more muffin liners or parchment paper needed.

Why splurge on a solid brand like Trudeau?

The integrated steel structure helps with the sturdiness and ensures that the mold will hold its shape.  The grey and purple color scheme is also very attractive and modern-looking.

Your finished product is ridiculously easy to remove from the pan.  Just push up from the bottom and it pops out with no sticking at all.

The Trudeau Structure Round Cake Mold has a lifetime warranty,  is dishwasher safe, microwavable, and able to go straight from freezer to oven.

I made a round carrot cake with the Trudeau Structure Round Cake Mold and I was amazed at how great it works. First of all, buttering it was a breeze.  My cake baked very evenly and popped right out after cooling. And the clean up? Washing the pan took just as much time as buttering it up since nothing had stuck to the pan (except for the grease from the butter).

I'm definitely sold on Trudeau's Structure Round Cake Mold and I can't wait to add their muffin pan and loaf pan to my collection!
