ROLO-Filled Cookies

 

I bought a huge bag of assorted miniatures candy, and ROLOs were being left behind.  So, I decided to make ROLO-filled cookies!  

Preparing them was messy (the dough was sticky), but the end result was a chocolaty cookie with a creamy, caramel center.  Yum!

ROLO-Filled Cookies

Ingredients:
  •  cup butter, softened
  •  1/2 c sugar
  •  c brown sugar, packed
  •  large eggs
  •  1 T vanilla
  •  c flour
  •  c cocoa, sifted
  •  t baking soda
  •  3/4 t kosher salt
  •  35 ROLOs
Instructions
  • Preheat oven to 350 degrees F.
  • In a large bowl, beat butter and sugars until creamy.  
  • Mix in eggs and vanilla.
  • In a separate medium bowl, combine the flour, cocoa powder, baking soda, and salt.  
  • Stir dry ingredients into the wet ingredients.  
  • Scoop approximately 2 T dough, and insert an unwrapped ROLO into the center, making sure dough completely covers the ROLO.  
  • Place dough onto a parchment-lined baking sheet and bake for 9-10 minutes.  
  • Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool.
