Pesto Tortellini Salad

Over the holidays I made Tortellini Skewers for get-togethers, and one night I decided to make a Tortellini Salad using the same basic ingredients.

I cooked a package of cheese tortellini according to instructions (I bought one of the packages from the local warehouse club), then mix the tortellini with olives, mozzarella, cherry tomatoes, and pepperoni.  I then tossed everything in a Pesto + Balsamic Vinegar dressing (1/2 c store-bought pesto, 2 T balsamic vinegar, 2 T water - reserve half).

Chill for at least an hour, and just prior to serving, drizzle on more dressing.

It's a super easy, very filling and tasty meal!
