S'mores Pops

Yesterday was National S'mores Day, so at the very last minute I decided to make a s'mores after school snack.

I simply took some graham crackers, broke them into rectangles (which lately I've found to be very difficult - whenever I try to break the crackers along the perforations they seem to just fall apart!), place mini marshmallows on some of the rectangles, and microwaved for 30 seconds.

I then placed a lollipop stick in the melted marshmallows, placed another graham cracker on top to create a sandwich, and dipped each sandwich into melted chocolate (I used 1 c chocolate chips + 1 T shortening and microwaved on high for 60 seconds).

I wanted to decorate them with sprinkles, but I had none (next time!).

Refrigerate for at least 30 minutes before serving.

Quick and easy!

A great treat for National S'mores Day, or any day!
