Rice Cooker Pancake

I'm not a big pancake fan, but I've wanted to try making a rice cooker pancake ever since I've seen photos online.

I was so afraid of my rice cooker pot overflowing that I decided to make a "mini" rice cooker pancake instead of those giant ones I've seen.

I simply used pancake mix and prepared it according to instructions, threw in some chocolate chips, and poured the batter into the rice pot.

My particular rice cooker has a white rice, brown rice, and steam setting.  I used the white rice setting first and it was done way too quickly (the pancake didn't look cooked), so I used the brown rice setting and it cooked perfectly.

The end result was a big enough pancake that fed my boys for several days.
I'm definitely going to try making a rice cooker pancake again - maybe even a giant one, or perhaps with different add-ins, or even a savory one!
