I was intent on baking Chocolate Chip Cookies one recent morning, only to discover that I was out of brown sugar! I was bummed, because I know brown sugar helps to make cookies soft and chewy (just the way I like them). I forged ahead, however, and found a No-Brown-Sugar Needed Chocolate Chip Cookie recipe, and it turned out fantastic!
Yes, it was on the crispier side, but it was still really yummy.

No-Brown-Sugar-Needed Chocolate Chip Cookies
Ingredients- 2 1/4 c flour
- 1 t baking soda
- 1/2 t salt
- 1 c butter, softened
- 1 1/2 c sugar
- 2 t vanilla extract
- 2 large eggs
- 2 c chocolate chips
- Preheat oven to 350 F.
- Combine the flour, baking soda and salt in a medium-sized bowl and set aside.
- In a separate medium bowl, cream together the butter and sugars.
- Mix in vanilla and eggs.
- Stir in dry ingredients.
- Mix in chocolate chips.
- Drop by heaping tablespoonfuls onto parchment-lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
