Oatmeal Butterscotch Cookies

I love butterscotch, and on one of my grocery trips before the SIP went into place, I bought some.

After searching for recipes that use butterscotch, I decided to try Oatmeal Butterscotch Cookies. 
They were really sweet and tasty!  The cookies were on the chewier side, which I liked.  If you love butterscotch, you'll have to try this recipe!

Oatmeal Butterscotch Cookies

Ingredients:
  • ¾ c butter, softened
  • ¾ c sugar
  • ¾ c packed brown sugar
  • 2 eggs
  • 1 t vanilla extract
  • 1 ¼ c flour
  • 1 t baking soda
  • ½ t ground cinnamon
  • 3 c rolled oats
  • 2 c butterscotch chips

Directions:
  • Preheat oven to 375 degrees Fahrenheit.
  • In a large bowl mix together the butter and sugar until creamy.
  • Mix in eggs and vanilla.  
  • In a separate bowl, mix together the flour, baking soda, and cinnamon. 
  • Mix the flour mixture into the butter mixture. 
  • Stir in chocolate chips.
  • Drop by teaspoonfuls onto parchment-lined baking sheets.
  • Bake for 8-10 minutes.
