Three-Ingredient Peanut Butter Cups

I love peanut butter cups!  They are my weakness. 

Since I'm trying to avoid going out at all in an effort to support social distancing, I decided to make my own.

I've made Peanut Butter Cups before, and that recipe was different in that it used more powdered sugar, and it also asked for butter.  This recipe just calls for 3 T powdered sugar, 1/2 c peanut butter, and 1 c chocolate chips, melted.

In mini muffin cups, scoop 1 T chocolate into bottom of cup.  Scoop 1 t of a combined mixture of the powdered sugar and peanut butter, then top with another 1 T of chocolate.

Refrigerate for an hour.

I did tweak the original recipe a little, by adding a scoop of vanilla protein powder, and adding 2 T of peanut butter to the chocolate chips to make the chocolate easier to spread (and a little extra PB never hurt, right?).

The end result was divine.

And I ate way too many...
