Granola-Topped Strawberry Mini Muffins

These Granola-Topped Strawberry Muffins (based on this recipe from Allrecipes) are a cinch to make.  Since I had some granola on hand, I decided to add them to the muffins for an added crunch, and it sure turned out yummy!

You can make them with or without the granola, but I like them much better with the granola!

Granola-Topped Strawberry Mini Muffins (recipe slightly adapted from Allrecipes)

Ingredients:

  • 1/4 c vegetable oil
  • 1/2 c milk (I used rice milk)
  • 1 egg
  • 1/2 t salt
  • 2 t baking powder
  • 1/2 c sugar
  • 1 3/4 c flour
  • 1 c strawberries, chopped
  • granola

Directions:
  • Preheat oven to 375 degrees F.
  • In a small bowl, combine oil, milk, and egg.
  • In a separate medium bowl, combine flour, salt, baking powder and sugar.
  • Add strawberries and toss to coat.
  • Pour in milk mixture and combine well.
  • Pour batter in mini muffin tin.
  • Sprinkle with granola.
  • Bake for 10 minutes.
