Lemon Cheesecake Bars

A friend of mine gave me some Trader Joes Meyer Lemon Cookie Thins, and I decided to use them to make cheesecake bars.

I used them for the crust, and also as a topping/garnish.

The cheesecake bars turned out fantastic - rich and creamy, with a light, lemony flavor.

Lemon Cheesecake Bars

Ingredients:
  • 1 sleeve of Trader Joes Meyer Lemon Cookie Thins, crushed
  • 2 T butter, melted
  • 2 8 oz pkg cream cheese, softened
  • 1/2 c sugar
  • 1 T lemon juice
  • 1/2 t vanilla extract
  • 2 eggs
  • 10 Trader Joes Meyer Lemon Cookie Thins, crumbled
Directions:
  • Heat oven to 350°F. 
  • Combine cookie crumbs and butter in a small bowl.
  • Press into bottom of parchment-lined 8x8 square pan and bake for 6 minutes.
  • In a separate medium bowl, mix together the cream cheese, sugar, lemon juice, and vanilla.  
  • Beat in eggs.
  • Pour cream cheese mixture over crust.  
  • Bake for approximately 20 to 25 minutes.  
  • Sprinkle/garnish with cookie crumbs.
