Chocolate-Covered OREO Cheesecake Bars

After buying a big box of OREOs from a local warehouse store to make some treats, I found myself with lots of OREOs on hand still.  So I decided to make these OREO Cheesecake Bars based on this recipe from Brown Eyed Baker.  The only big difference is that I dipped the bars in chocolate to make them that much more indulgent.

Whether you dip them in chocolate or not, the OREO Cheesecake Bars are sooooo yummy!

Chocolate-Covered OREO Cheesecake Bars (recipe slightly adapted from Brown Eyed Baker)

Ingredients:

Crust:
  • 20 OREOs, crushed
  • 2 T butter, melted
Cheesecake:
  • 12 oz cream cheese, softened
  • 1 c  sugar
  • 3 large eggs
  • 6 T sour cream
  • 1½ t vanilla extract
  • 10 OREOs, chopped
Chocolate topping:
  • 2 c chocolate chips
  • 1 T flavorless coconut oil or Crisco
Directions:
  • Preheat oven to 325 degrees F.
  • Combine crushed OREOs and butter.  
  • Press onto bottom of parchment-lined 8x8 baking pan. 
  • Bake for 10 minutes.
  • In a medium bowl, mix cream cheese and sugar until smooth.
  • Stir in the eggs, sour cream, and vanilla.  
  • Fold in the chopped Oreos, then pour the batter over the prepared crust.
  • Bake for approximately 40 to 50 minutes. 
  • Let cool at room temperature, then refrigerate for at least an hour before cutting into bars.
  • Heat the chocolate chips and coconut oil in a microwave-safe bowl in the microwave on high for 1 minute (heat for additional 30 minute increments if necessary).  Stir until smooth.
  • Dip the top of each cheesecake bar into the melted chocolate.
  • Refrigerate for at least 15 more minutes before serving.
