Quinoa Cakes Recipe

I love to eat quinoa, and one day I decided to try and make some quinoa cakes.

I basically just threw a bunch of items I had into a bowl to make the quinoa cakes, and it turned out delicious - even my kids ate them up!

I put about 2 cups of cooked quinoa in a medium bowl and combined it with 3/4 cup shredded chicken, 1/2 cup chopped onion, 1 egg, 3/4 c panko, and seasoned with salt and pepper.

I formed the mixture into patties and pan-fried them in vegetable oil until golden brown on each side.

The kids ate the quinoa cakes as is, but I dressed up the grownups' cakes with chopped tomatoes and red onion, parsley, and homemade Sriracha mayo.
You really can use whatever you have on hand in your pantry, and it's a great way to use up leftovers!

On a recent night, I made these quinoa cakes and topped them with curry sauce - yum!

I can't wait to try out new variations!
