Butterscotch Blondies Recipe

I don't bake with butterscotch very often, but I love butterscotch desserts.  When I found this Butterscotch Blondies recipe by Jen's Favorite Cookies, I knew I had to try it!


I doubled the recipe, and the blondies turned out fantastic.  They were soft and chewy, and the butterscotch really gave it a nice, distinct flavor.

Butterscotch Blondies (recipe credit Jen's Favorite Cookies)

Ingredients
  • 1 c (2 sticks) butter, softened
  • 1 c sugar
  • 1 c brown sugar
  • 2 egg
  • 2 t vanilla
  • 1 t baking powder
  • 2 c flour
  • 1 c butterscotch chips
Directions
  • Preheat oven to 350F.
  • Line a 9x13 pan with parchment paper.
  • Mix butter, sugar, and brown sugar until light and fluffy.
  • Add in eggs and vanilla and stir well.
  • In a separate bowl, combine flour and baking powder.
  • Pour flour mixture into sugar mixture.
  • Fold in butterscotch chips.
  • Bake at 350F for 30-35 minutes until brown.
