Happy Boys' Day!



Tango no Sekku was originally known as Boys' Day and on this day, families would raise koinobori flags to celebrate.  May 5th is now known as Children's Day, but our family celebrates it as Boys' Day and we got our koi up with just a day to spare.  Phew!

Of course at the last minute, I decided I wanted to make a treat for my son's preschool class.  Luckily, I always have a couple of cake mixes in the pantry (because you never know when that craving will hit).  I'm so glad I started making my own frosting too because all you need is butter, powdered sugar, vanilla extract and some milk to make a great tasting butter cream.  

I started brainstorming ideas for the decoration and I remembered I had individual packets of swedish fish...somewhere.  After some searching, I found them and they were perfect for the cutest last-minute cupcakes for Boys' Day.
