Banana Cake with Cream Cheese Frosting

I'm not a big fan of cakes, cupcakes, and anything else with frosting, but I'll make an exception if the frosting is made with cream cheese.

Since I had some cream cheese to use up, I decided to make a Banana Cake with Cream Cheese Frosting based on this recipe from Taste of Home.

I ended up using the entire frosting recipe to frost the cake, but next time I'd just use half the recipe, because it was quite a thick layer of frosting.

I also added some leftover Brickle bits I had in the pantry.  It made the cake look pretty, but it tasted way too sweet (next time I'd leave the Brickle off entirely, and maybe add some chopped nuts instead).

However, once I took off all of the Brickle bits, the cake was perfect.

In fact, the banana cake itself without the frosting was super good too!



Banana Cake with Cream Cheese Frosting (recipe credit Taste of Home)

Ingredients:
  • 1/2 c butter, softened
  • 2 c sugar
  • 3 eggs
  • 2 bananas, mashed
  • 1 t vanilla extract 
  • 2 c flour
  • 1 baking soda
Frosting
  • 1 8 oz pkg cream cheese, softened
  • 1/2 c butter, softened
  • 1 box (16 oz) confectioners sugar
  • 2 t vanilla extract
Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium bowl, mix butter and sugar until light and fluffy.
  • Mix in the eggs, bananas, and vanilla.
  • In a separate medium bowl, combine the flour, baking soda, and salt.
  • Stir into the creamed mixture until blended.
  • Pour batter into prepared 9x13 inch baking pan.
  • Bake for 20-25 minutes.
  • Meanwhile, make frosting by combining cream cheese and butter until fluffy. 
  • Add confectioners sugar and vanilla; stir until smooth.
  • Frost bars after they have cooled.
