Vanilla Wafer Sandwich Bites

The 5-Ingredient Weeknight Meals Cookbook is one of my new favorite cookbooks.  The recipes are so simple and easy to make.

One of the easiest recipes is for these Vanilla Wafer Sandwich Bites.

I simply took some Nilla wafers and spread some creamy peanut butter on some wafers and topped them with others to make sandwiches.  

I refrigerated them for 15 minutes and dipped them in some melted chocolate (I used 1 cup chocolate chips with 1 1/2 t flavorless coconut oil and microwaved on 50% power for 1 minute; repeat for 30 seconds if necessary).  The original recipe calls for melting a baking bar, but since I didn't have any on hand, I just used chocolate chips (which I always have on hand!).

I refrigerated them for another 15 minutes, and they were ready to be devoured!
