Bacon & Eggs Bread Pudding

I love breakfast casseroles, so I was eager to try out a Bacon & Eggs Bread Pudding Recipe from the 5-Ingredient Weeknight Meals Cookbook.  Although I didn't follow the recipe exactly (it asked for French Bread and didn't call for cheddar cheese) I just made do with what I had on hand, and the bread pudding still turned out delish!


I simply took 4 eggs and whisked it together with 1 cup of milk, 1/2 cup Parmesan cheese, 3 T melted butter, and a pinch each of salt and pepper.  I then took 6 slices of bread and cut them into 1-in cubes, and tossed them, along with 6 pieces of crumbled bacon, into the egg mixture.

I poured everything into a 9x13 pan, topped with 1/2 cup of cheddar cheese, and baked for approximately 30 minutes at 350 degrees Fahrenheit.

The recipe is very versatile, and I anticipate throwing in all kinds of other meats (ham, sausage) and cheeses (Pepper Jack) the next time I make this savory bread pudding!
