Mini Blueberry Muffins Recipe

I've been cleaning out my recipe folder, and I found this Blueberry Muffins recipe from the December 2006 issue of American Baby Magazine.

I made mini muffins instead of regular muffins, and they make the perfect afternoon snack!

Mini Blueberry Muffins (recipe credit American Baby Magazine):

Ingredients:

  • 2 c flour
  • 3/4 c sugar
  • 2 1/2 t baking powder
  • 1/2 t salt
  • 2 eggs
  • 3/4 c milk
  • 1 stick butter, melted
  • 1 c frozen blueberries
Directions:
  • Preheat oven to 375 degrees Fahrenheit.
  • Spray mini muffin tin with cooking spray.
  • Combine flour, sugar, baking powder, and salt in a medium bowl.
  • In a separate bowl combine eggs, milk, and butter.
  • Add wet mixture into flour mixture and stir just until moistened.
  • Fold in blueberries.
  • Scoop teaspoonfuls of the batter into the muffin tin.
  • Bake for approximately 10-12 minutes.
