Mango Muffins Recipe

Remember that mango bread recipe I recently posted?  With a couple of tweaks I made mango muffins.  Despite the fact there are raisins in the muffins, my middle son (my very picky eater who despises raisins) loved them and keeps asking for them.

Mango Muffins (recipe adapted from Allrecipes):

Ingredients:
  • 2 c flour
  • 2 t baking soda
  • 1/2 t salt
  • 2 ts ground cinnamon
  • 1/2 c butter, softened
  • 1/2 c vegetable oil
  • 1 1/2 c sugar 
  • 3 eggs
  • 1 t vanilla extract
  • 3 c peeled, seeded and chopped mango
  • 1/2 cup raisins
  • 1/2 cup shredded coconut

Directions:
  • Spray mini muffin tin with cooking spray.
  • In a large bowl, combine the flour, baking soda, salt, and cinnamon.  
  • In a separate large bowl, mix the butter, oil and sugar until fluffy. 
  • Stir in eggs one at a time.
  • Stir in vanilla.  
  • Combine wet mixture with the flour mixture.  
  • Fold in the mango, raisins, and coconut
  • Preheat oven to 350 degrees F (175 degrees C). 
  • Bake in preheated oven for approximately 10 minutes.
