Strawberry Cake Recipe

Whenever I find myself in excess of a fruit (bananas, blueberries, etc.) I tend to use them in desserts, so recently having way too many strawberries on hand, I decided to make this Strawberry Cake from MarthaStewart.com before they all spoiled.

Of course my finished product looked nothing like the one on the website - I didn't use enough strawberries, for one thing.  So to make it look a little more decent, I decided to drizzle on some Nutella.

The end result was a cake that looked and tasted fab!

Ingredients:
  • 6 T butter, plus more for pie plate
  • 1 1/2 c flour
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 1 c plus 2 T sugar
  • 1 large egg
  • 1/2 c milk
  • 1 t pure vanilla extract
  • 1 lb strawberries, hulled and halved

Directions: 
  • Preheat oven to 350 degrees. Butter a 10-inch pie plate.
  • Mix flour, baking powder, and salt together into a medium bowl.
  • Mix butter and 1 cup sugar in a separate medium bowl until light and fluffy.
  • Stir in egg, milk, and vanilla.
  • Gradually mix in flour mixture.
  • Transfer batter to buttered pie plate.
  • Arrange strawberries on top of batter, cut sides down and as close together as possible.
  • Sprinkle remaining 2 tablespoons sugar over berries.
  • Bake cake 10 minutes.
  • Reduce oven temperature to 325 degrees and bake for approximately 1 hour.
  • Let cool in pie plate on a wire rack. Cut into wedges.
