Mini Banana Muffins with Crumb Topping

After I made the Mini Banana Muffins with a Cream Cheese and Crumb Topping (based on this recipe from Food.com), I decided to make a batch without cream cheese, and it turned out just as yummy!
 

Mini Banana Muffins with Crumb Topping (recipe credit Food.com):

Muffin Ingredients:
  • 1 1/2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 t salt
  • 3 bananas, mashed 
  • 3/4 c sugar
  • 1 egg
  • 1/3 c butter, melted
  • 1 T vanilla extract
Crumb Topping Ingredients:
  • 1/3 c brown sugar
  • 1/4 c flour
  • 1/2 t  ground cinnamon
  • 1 T butter, melted
Directions:
  • Preheat oven to 375 degrees.
  • Spray mini muffin pan with cooking or baking spray.
  • Prepare muffin mix by combining flour, baking soda, baking powder, and salt.
  • In a separate bowl, combine the bananas, sugar, egg, melted butter and vanilla extract.
  • Combine banana mixture with the flour mixture until just moistened.
  • Spoon batter (approximately 2 teaspoonfuls) into prepared muffin cups
  • Create the crumb topping by mixing all 4 ingredients until crumbly. 
  • Sprinkle mixture over the batter.
  • Bake for approximately 10-12 minutes or until a toothpick inserted into the center comes out clean.
