Homemade Strawberry Ice Cream

I LOVE homemade ice cream, and lately I've been trying out various types of ice cream recipes in my Cuisinart Ice Cream Maker.

Even though I only had frozen strawberries on hand, I tried Cuisinart's Fresh Strawberry Ice Cream recipe, and it still turned out delicious!


Strawberry Ice Cream (credit Cuisinart):


Ingredients:
  • 3 c fresh ripe strawberries, stemmed and sliced (I used frozen strawberries)
  • 4 T freshly squeezed lemon juice
  • 1 1/2 c sugar, divided
  • 1 1/4 c whole milk
  • 2 3/4 c heavy cream (I used 2 cups)
  • 1 1/2 t pure vanilla extract
Directions:
  • In a small bowl, combine the strawberries, lemon juice, and 1/2 cup of the sugar. 
  • Stir and allow the strawberries to soak in the juices for 2 hours. 
  • Strain the berries, reserving juices. 
  • Mash half the berries.
  • In a medium mixing bowl, combine the milk and remaining 1 cup sugar until the sugar is dissolved.
  • Stir in the heavy cream, reserved strawberry juice, mashed strawberries, and vanilla. 
  • Turn the machine on; pour the mixture into freezer bowl, and let mix until thickened, about 20 minutes.
  • Add the reserved sliced strawberries and let mix in completely for 5 more minutes. 
  • Transfer the ice cream to an airtight container and place in freezer for about 2 hours. 
  • Remove from freezer about 15 minutes before serving to allow for easier scooping.
