We took a plane to get from Tokyo to Osaka, but took the Shinkansen to get back to Tokyo from Osaka.
I booked via SmartEX online (there is also a mobile app). It's quite simple - put in your origin and your destination stations, as well as your preferred time of departure, and you'll end up with a number of options. The trains run every few minutes, so you have lots of options. I booked our trip based on the price. Because we booked well in advance, I found that it was cheaper for Green Car Reserved seats vs Regular Reserved Seats, so it was a no-brainer. Non-reserved seats were priced low too, but we didn't want to chance it with a non-reserved seat (the website does state that non-reserved seats are the same price when bought at the train station, but it's cheaper to reserve via SmartEX for reserved seats).

The app will automatically assign you seats based on your preferences, but you can easily change them to what suits you.
One of the most talked about topics in regards to the Shinkansen is luggage. Effective July 1 reservations are no longer needed on certain decks on a trial basis, so the below may only apply in certain situations, or may no longer apply.
You need to reserve a seat with OVERSIZED luggage storage if you have OVERSIZED luggage. I emphasize oversized because you really need to take a look at your dimensions. I read something that made the most sense - if you check in a piece of luggage at the airport that you have to pay extra for because of the dimensions, that would be considered oversized.

Your normal-sized checked luggage and carry-ons can be stored on the overhead storage areas.
If you prefer, you can reserve seats that have luggage storage (typically the last row or noted as "seats with an oversized baggage compartment" - which is in between cars).

After purchasing our tickets, we simply added the QR codes to our Apple Wallets, which is needed to scan both in and out.
When you scan in, you will get a seat assignment ticket.
As mentioned, can also buy tickets at the station. I have read it's not uncommon to buy tickets the day of, just before departure.

Once onboard, we stowed our luggage, ate our bentos, and relaxed. Attendants will walk through the cabins every once in a while.

Our car was pretty empty the entire 3.5 hour ride. I have read that depending on the season (like during Golden Week), it can be very busy, so you should buy your train tickets in advance to get your ideal time.
