I first started making these Cranberry Cheesecake Bars just for the holidays, but I love cheesecake so much that I make it whenever the mood strikes.
Cranberry Cheesecake Bars

- 3/4 c plus 1 T firmly packed brown sugar, divided
- 1 c butter, softened
- 2 c all-purpose flour
- 1 1/2 c old fashioned oats
- 1 8 oz pkg cream cheese, softened
- 1 can sweetened condensed milk
- 1/4 cup lemon juice
- 1 can whole cranberry sauce
- 2 T cornstarch
Directions
- In a large bowl, combine 3/4 c brown sugar, butter, flour, and oats until crumbly.
- Reserve 1 1/2 cups of the mixture and set aside. Press remaining mixture onto bottom of prepared 9x13 pan and bake in a preheated 350°F oven for 15 minutes.
- Meanwhile, in a small bowl, mix together cream cheese, sweetened condensed milk, and lemon juice until smooth.
- In a separate small bowl, combine cornstarch, cranberry sauce, and remaining 1 T brown sugar.
- Pour cream cheese mixture onto baked crust, followed by cranberry sauce mixture.
- Top with reserved oat mixture.
- Bake 45 minutes longer.
- Cool and cut into bars.
