Recipe: Coconut Tapioca Pudding

A local vlogger on YouTube inspired me to try making Coconut Tapioca Pudding at home. I didn't know how easy it was to make until I watched her video and tried it myself. I had most of the ingredients in my kitchen, except for the small tapiocal pearls, which I found at a nearby grocery store.

Here's how to make it: 



After rinsing 1/2 cup of tapioca pearls under cold water for 15 seconds (use a strainer), add the pearls to 1 1/2 cups of boiling water. Stir stir stir (reduce heat if necessary), until the pearls become translucent.



Then add one can of coconut milk,



1/3 cup of sugar and 1/8 a teaspoon of salt.



Keep stirring for 7-10 more minutes.


Remove from the stove and let it cool down for 20 minutes. Then refrigerate until chilled (a few hours).

Enjoy by itself or topped with mango, cooked sweet potato, or banana.
