Salted Caramel-Stuffed Chocolate Cookies


I love all things salted caramel, so I decided to make some Salted Caramel-Stuffed Chocolate cookies using Kauai Sweet Shoppe's Hawaiian Sea Salt Caramels and Malama Mushroom's Lion's Mane Cacao Mix.

Salted Caramel-Stuffed Chocolate Cookies

Ingredients:
  • 1 c unsalted butter, softened
  • 1 c dark brown sugar
  • 1/2 c granulated sugar
  • 1/2 c Malama Mushroom's Lion's Mane Cacao Mix
  • 2 large eggs
  • 1 t vanilla extract
  • 3/4 t baking soda
  • 1/2 t salt
  • 2 1/2 c all-purpose flour
  • 2 c semisweet chocolate chips
  • 24 Kauai Sweet Shoppe Hawaiian Sea Salt Caramels
Directions:
  • Preheat oven to 350° Fahrenheit. 
  • In a medium bowl, mix butter and sugars until smooth. 
  • Mix in Lion's Mane Cacao Mix until well combined.
  • Mix in eggs and vanilla until smooth. 
  • In a separate small bowl, combine flour, baking soda, and salt.
  • Mix flour mixture into sugar mixture.  
  • Fold in chocolate chips.  Be careful not to overmix.
  • Using a medium scoop (approximately 2 T), scoop dough into balls.
  • Place an unwrapped caramel into the center of each ball, ensuring that the caramel is covered completely.
  • Place balls of dough onto a parchment-lined cookie sheet, at least 2 inches apart.  
  • Bake for 13-15 minutes in a preheated oven.
  • Let cool on baking sheet for 5 minutes before transferring to a wire rack.

Yield: 24 cookies
