`O`io Fishcake Tempura by Chef John Iha of Gochi Grill

Chef John Iha of Gochi Grill spends his off time fishing.  During the pandemic craziness, he's been finding himself fishing a lot due to temporary closures of his restaurant.

He's been catching a lot of `O`io (bonefish), and I was able to learn how he makes Steamed Fishcake and Fishcake Tempura with the bonefish (I even helped him make it!).

It was so tasty!  He would have made this for our Na`au x Gochi Grill collab, but hopefully we can reschedule it for next year!

In the meantime, you can find out how to make the O`io Fishcake Tempura on Nadine Kam's Thursday Tables.
