Easy Eggplant Parmesan

I love Eggplant Parmesan, and I made some recently with some typical pantry finds.

I simply sliced up two eggplants, pan-fried them until golden brown after dipping in flour, egg, and panko, then layered them in a 9x13 baking pan with some spaghetti sauce.  I sprinkled on some Parmesan cheese, and baked at 350 degrees Fahrenheit for 25-30 minutes.

It turned out delish.  It was definitely a quick and easy meal!
