Unicorn Cookie Bars

Prior to the stay-at-home order, I picked up a bag of Unicorn Chips from the grocery store because I thought they'd be something fun to bake with.  I finally used them to make Unicorn Cookie Bars.

The chips were a little too sweet for my taste (vanilla-flavored), but the kids loved them, and I sure enjoyed the colors!

Unicorn Cookie Bars

Ingredients:
  • 1 1/2 c flour
  • 1/2 t baking soda
  • 1/8 t salt
  • 1 c butter, softened
  • 1/2 c granulated sugar
  • 1/2 c firmly packed light brown sugar
  • 1 large egg
  • 1 t vanilla extract
  • 2 cups unicorn chips, divided
  • 2 T sprinkles
Directions:
  • Preheat oven to 350°F. 
  • In a medium bowl combine flour, baking soda and salt.
  • In a separate large bowl, cream butter and sugars until light and fluffy.
  • Mix in egg and vanilla. 
  • Pour in flour mixture and combine well.
  • Mix in 1 c unicorn chips and the sprinkles.
  • Pour batter in prepared 9x13 pan and top with remaining unicorn chips, and bake for 20-25 minutes.
