Cheddar and Tomato Muffins

I love baking savory muffins, and when I received some grape tomatoes in my CSA delivery, I decided to make some Cheddar and Tomato Muffins.


They were so delish!  I definitely want to try and add bacon next time!

Cheddar and Tomato Muffins

Ingredients:

  • 2 c flour
  • 1 T baking powder
  • 1 T sugar
  • 1 t salt
  • 1 large egg, beaten
  • 1 c milk
  • 1/4 c oil
  • 1 c shredded cheddar cheese
  • 1/2 cup grape tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
Directions:
  • Preheat the oven to 350° F
  • Mix together the flour, baking powder, salt and sugar in a large bowl.
  • In a medium bowl, mix the egg, milk, and oil together.
  • Add the egg mixture to the flour mixture.  Mix just enough to moisten. 
  • Fold in cheddar cheese and tomatoes.  
  • Fill muffin cups 2/3 full.  (Add a half grape tomato on top if you wish). 
  • Sprinkle tops with grated Parmesan. 
  • Bake 18-20 minutes.
