Hash Brown Pizza

I decided to try and make hash browns from scratch since I had a bunch of potatoes on hand, and use the hash browns as a base for Hash Brown Pizza.

I took 4 medium russet potatoes, shredded them into ice cold water and rinsed and drained twice.  I squeezed and strained them to get out as much water as I could, before mixing them with 2 T oil, 1/2 t salt, 1 /2 t black pepper, and 1/2 c shredded cheddar cheese.

I spread out the potatoes evenly on a rimmed baking sheet, and baked for 400 degrees Fahrenheit for 20 minutes. 

I then topped with another 1/2 c shredded cheddar cheese, 1/2 c crumbled bacon, and cracked 6 eggs on top.

I overcooked the pizza (17 minutes) to where the eggs turned out a little rubbery, so I would check on the pizza after 12-15 minutes. 

Garnish with chopped green onions and salt and pepper.

Easy!

This pizza is great for any meal of the day!
