Almond Float Recipe



A few days ago my son asked for almond jello. Luckily it's easy to make, and I had the ingredients on-hand. 

There are many recipe variations, but I like this recipe from Hawaiian Electric's website the best.

Here's what you'll need:

  • 2 tablespoons unflavored gelatin
  • 1 1/4 cups water
  • 3/4 cup sugar
  • 1 cup unsweetened almond milk or soy milk 
  • 1 tablespoon almond extract
  • 1 can (15 ounces) lychees
  • Fresh cut assorted fruits like mango, watermelon, melons, kiwi, strawberries, blueberries, raspberries, grapes



Just follow the directions on the recipe and in a couple of hours it's ready to eat. I used regular 2% milk instead of almond or soy milk, and canned fruit cocktail as a topping.
